Roasted Pepper Sandwich....REALLY YUMMY!
Has anybody seen those "supersweet" peppers in the store? They have them at Costco but regular red or yellow bell peppers would work too.
This is a version of a sandwich they serve at an Armenian deli by my house, but since I'm iffy on the amount of olive oil and stuff they use, I ventured to make my own so I could could control it better calorie-wise.
Basically, you dice thin-skinned cucumbers, tomatoes, and purple onions, mix in some fresh herbs (cilantro is what I used) olive oil and garlic, and set aside.
The peppers you blacken either on the broil or grill....it really brings out the flavor!
Then you spread half of a whole-wheat pita with 2 T of hummus - fill with a scoop of veggie mixture and top with the peppers. I did put a little feta cheese in there but if you're vegan, it's good without it too.
