Default Seitan--do you make it?

Has anyone tried making seitan? I just got Vegan with a Vengeance, and she describes how to make it. I was just wondering whether anyone has had success with it.

I've made seitan many times.... a couple different recipes. Both have been yummy. I ran the deli in an organic/natural foods market and it never went outdated before it sold out. Good luck!!

I don't make my own seitan, but I cook wheatberries (like rice, but it takes less time) and use them in place of ground beef in recipes. I love the texture of the wheatberries.

I tried it once and screwed it up royally. Now I try to find it at Whole Foods; no one else around here seems to carry it.
