I've not done the WW diet but I'm *fairly* sure you shouldn't gain 1.5 stone on it!!!!!

Exercise does put on muscle while reducing fat - but either you have got absolutely MASSIVE muscles or something has got a bit wrong. Have you spoken to your doctor about it?
Its not a cure-all but it might help if you get tested for an under-active thyroid.
Your China adventure sounds amazing - you are a very brave lady - are you doing it alone or with friends?
