Sounds like a great idea to me. We have lots of recipes at the yahoo group, but we can have some here too!
I plan to have lentil stew tomorrow - low fat and very filling. I make a big pot, enough for 2 days, and my skinny dh eats it too, he has no choice

I bag continental lentils
2 chopped tomatoes
4 medium potatoes, peeled and chopped into quarters
1 grilled green pepper, seeds removed
2 grilled garlic cloves, whole

Just stew all the ingredients together for about 40 minutes, except the potatoes, which are added halfway through the cooking

Default Eazi-Freeze Lemon Sponge

Recipe for the Cake Monster as promised

POINTS
Per recipe 50½
Per slice 3

Serves 16
Preparation time -- 15 minutes
Cooking time -- 1 hour
Calories per slice – 190
Freezing – recommended

This is delicious with 2 tablespoons of virtually fat-free fromage frais. The Points will remain the same.

• Low fat cooking spray
• Juice and finely grated zest of 1 lemon
• 150g (5½ oz) caster sugar
• 150ml of low-fat plain yogurt
• 150ml (5fl oz) sunflower oil
• 250g (9 oz) self-raising flour
• 2 large eggs

Preheat the oven to Gas Mark 3/170oC/325oF. Spray a 20cm (8 inch) round cake tin with low-fat cooking spray and line with greaseproof paper.

Put the lemon juice into a bowl and add one teaspoon of the caster sugar.

Put the lemon zest into a large mixing bowl and add the remaining sugar, yogurt, oil, flour and eggs. Beat the mixture for 1 minute with a wooden spoon to mix thoroughly.

Pour the mixture into the prepared tin, then transfer to the middle shelf of the oven and bake for approximately 1 hour or until risen and springy when lightly touched.

Stand the cake tin on a cooling rack, and while hot, slowly spoon the lemon juice mixture over the cake. Allow to cool in the tin.

When completely cooled, cut the cake into 16 portions.

Top tips: wrap the portions not required in freezer wrap, then freeze for up to two months. Only defrost the portions required to reduce temptation.

Use the empty yogurt carton as an easy measure to make the cake even quicker to prepare. You’ll need 2x caster sugar, 1x sunflower oil and 3x self raising flour. Points remain the same.

I tend to use about 3 lemons though

I made this yesterday and we all enjoyed it, so I thought I would share it. I only know the WW points, don't have a book to work out the cals.

Jerk Chicken with Pineapple Salsa

Serves 4
Freezing not recommended
Points = 4


Ingredients

4 boneless, skinless chicken breasts
2 teaspoons lemon juice
1 tablespoon Jamaican jerk or Cajun seasoning

For the salsa:

6oz pineapple finely chopped
4 spring onions, chopped
1¾ oz red pepper, chopped
2 tsp ground ginger
1 tablespoon cider vinegar
1 tablespoon soft brown sugar
4 tablespoons barbecue sauce


Method

1.Make the salsa. Mix together all the ingredients and place in a small saucepan. Warm though over a gentle heat.

2. Preheat the grill to a medium-to-hot setting. Make 2-3 incisions into the chicken with a sharp knife.

3. Sprinkle over the jerk or Cajun seasoning, rubbing it thoroughly into the breast. Grill, seasoned side up, for 4-5 minutes, brushing occasionally with the lemon juice.

4. Turn the breasts over and grill for 3 – 4 minutes.

5. Turn the breasts back over, brush the seasoned side with the remaining lemon juice, turn the grill up to the highest setting & grill for 5 minutes until crisp & dark in colour.

Serve the chicken with the warm salsa.
