OMG- I am so pissed! I have spent the last 30 minutes writing a LONG post and it's gone. I'm pissed! It's been awhile since I've been able to sit here and "spill my guts." And now it doesn't matter. URGH! I'm okay, but now I don't have the time to rewrite it. Sucks.

The black bean soup turned out really good. I have a beef roast in the pressure cooker now. I am going to make Mexican meat mix, so I can use it for tacos and stuff. I got low carb, whole wheat tortillas at the store, and all the fixings. :) I also got a pork roast to try in the pressure cooker, and pinto beans to cook in the pressure cooker...
I ate a very large bowl of black bean soup for dinner, and had hummus for lunch. Tonight, I went to the store and all those beans helped propel me through the store! :lol3: BOB: Have you looked at the Miss Vicki Pressure Cooker site? It has a ton of recipes and info on it. I will just do the cold water release from now on. Tonight, I just turned off the roast and left it. I am going to bed in a bit, and it can sit there nice and sterile over night. :) HEART: I am so sorry you lost your post. I hope just writing it helped?! |
Oh Monet you are making me to hungry. All those good things you're cooking. Happy Sunday to you all. We're enjoying the long week end. May go for a ride today in the woods. Its so pretty out. And are for sure barbequeing steaks and doing scallops for dinner. It was lasts nights meal but we ended up just snacking around instead. Nothing much to talk about since I'm not doing anything worth while. Hope you all are having a good week end...

I haven't fall off the face of the earth, just lazy. I spent the last few days checking out nurseries for some ideas for my flower bed etc. It has been fun. I found some awesome deals on daylilies, gosh, I know I have fallen in love with them. Yesterday was a bad day of eating and I already knew I would fall off the wagon completely...lol. It was so worth it. Dh and I took my nextdoor neighbors to our fav southern restaurant which is about 1 hr drive away. The restaurant is very famous for its authentic southern food....oh my, so worth going there to break my plan...lol. Yesterday was seafood/southern food buffet which consists of their cook-to-death collard greens and broad green beans (forgot what they are called), steamed mixed veggies, black eye peas, fried chicken, fried scallop (oh yum! they were so sweet and fresh), fried shrimps, fried whole catfish, fried oysters, fried green tomatoes (yum!), stuffed crabshell with crabmeat etc, baked potato skin with bacon, shredded BBQ pork, BBQ ribs, sweet potatoes souffle (awesome!), corn on the cob, delicious macaroni and cheese, beef roast, baked beans, 2 different kinds of soups, steamed snow crab legs (which everyone loves), a salad bar full of different kind of salad and various delicious dessert like...chocolate cake, lemon creme pie, key lime pie, apple pie, peach cobbler, pecan pie etc etc. The 5 of us didn't behave ourselves and were too stuffed by the time we left...LOL. I had 1 fried chicken wing, few fried scallops. fried shrimps, fried oysters, both greens (love it!), macaroni and cheese, sweet potato souffle, half piece of baked potato skin, 3 pieces of fried green tomatoes, a small scope of baked beans and 2 small taste of chocolate cake which was too rich for me. If I am not pregnant, I am sure I will do much worst since I will have more stomach space...lol. I could not eat any dessert except tried my dd's chocolate cake. Boyy....the food was great. I am just so glad the restaurant is 1 hour away so we can't get there as much as we like...lol. My neighbors had a great time as well so we had a great day. Today, we didn't go to church as Jess was still sneezing and her nose is still very runny. I am really not too sure if it is a cold or allergies. She is doing well though. Dh is working today since he took yesterday off but will be off again on Monday. I am planning to do some cleaning around the house today and take it easy after that. Tomorrow will be a "planting" day as dh is off. He will tilt the ground for me to put my plants and flowers in. We might have a little BBQ but not sure if there would be guests. We will grill some filet mignon that we bought from Costco (first time), baked beans, low carb potatoes, coleslaw and watermelon as dessert. Yep, not a legal menu for could be worst :) I just have to watch my portion. I won't be doing any personal replies since I am so way behind but I have read all the posts. KENG: Ok, you have me dying of curiousity...what is the name of the restaurant and where is it?? It sounds wonderful and we may have to check it out sometime when we are looking for a place to go for a special occasion! It would be great if it were an hour NORTH of you! :lol:

I think you will need to have a heavy southern accent in order to work there...lol. It took me a while to figure out what the waitresses were talking about...lol.
