Can someone explain to me what Wheat Gluten is exactly? I always thought it was the bad part of the flour and that we were to stay away from it. I've decided I don't understand it well enough to figure it out and that what I am thinking about it may be all wrong.
gluten is actually a protein found in wheat (and some other whole grains). There's nothing unhealthy about it unless you have celiac disease (an allergy to gluten that causes intestinal problems). It's also found in rye, barley and oats.
