Update on the cooking for 2 problem. I started buying the individual portions of frozen fish at the wholesale club, cod and flounder. They are great and easy to prepare for a serving or 2 at a time. If I think about it ahead of time, I pull down a couple to the fridge and let them thaw overnight, but if not, I throw them in a pan and pop them into the oven with a spash of oil and seasonings.

Vegetables aren't really a problem, I've kind of gotten the hang of it. I've decided that I'm not forcing myself to eat veggies I don't really like-broccoli and cauliflower. I keep several bags of frozen veggies around and if I don't have fresh I use frozen and tell dh he can run to the store and pick up some fresh if he wants them but I'm not. Shoot, I'm finally getting assertive.

My little grill thing comes in handy too. I made up some dump chicken breast recipes that taste really good. Keep them in the freezer. Only problem is I forget to thaw them. Oh well, one of these day's I'll get the hang of it.

And I keep small portions of meat frozen so that I can grab just enough for the 2 of us, instead of defrosting the entire 4 pound package.

And I picked up a box of the Bulca (?) burgers (those veggies burgers) at the wholesale store-good thing that aren't too bad tasting. They come in handy when I don't feel like cooking anything. Pop those babies into the microwave and tada we have a main entree.

I have been eating the Tomato-Basil pizza and the Philly Cheesesteak veggie burgers, I think they are made by Morningstar Farms. They are both REALLY yummy. Check out my Parmesan fish recipe on the recipe boards--I think it is in Phase I entrees. It is SO good, quick and easy on the stovetop.

Sarah - I sympathize with the cooking for a fussy eater, although in my family it's *me* - I have a sensitive stomach and have to avoid a lot of foods. DH, on the other hand, will literally eat anything that is kosher. But I still have to cook for a fussy person, even if it's myself! Plus I have a toddler - he's not only fussy these days, but his likes and dislikes change frequently, sometimes daily! Now that is *really* hard to keep up with!

It sounds like you are reaching a good compromise, and it's good that while your DH is fussy, he'll still eat what you make, even if it's not his favorite!
