Default Had a YUMMY breakfast this morning

Hello to all you Chickies. I hope that everyone is doing well.

I wanted to write today to just share with everyone a yummy breakfast that I made for myself this morning. I'm not sure where I got this recipe/idea, it may have been here, but I wanted to share it bc I believe it's all phase friendly.

Ricotta Crepes, I guess you could call them.
I mixed 2 eggs, 2 tbsp part skim ricotta, a dab of vanilla, and cinnamon to taste. I then cooked that like an omlette, cooking one side and then flipping to the other until cooked. I then put it flat on a plate and put 2 tbsp of part skim ricotta, mixed with a dab of vanilla and dab of splenda, down the middle and rolled it up. It was sooooo good and definately filling enough for the next few hours.

I just wanted to share that with everyone that may be getting sick of their eggs. It's just a little twist but it was very satisfying to me.

OOOOHH... That DOES sound yummy! I'm not all that fond of the ricotta "desserts" in the book, but a ricotta omelette for breakfast??? NOW we're talking! Thanks for the idea.

Someone told me to put the ricotta in a blender if I didn't really care the desserts cuz it made them creamier. You might try that. I like ricotta but I don't like the texture.

And in Phase 2, you could add a little SF preserves or jam to it. Yummy! Great idea, amur!

Bunna,

The ricotta desserts are heavenly if well processed in a food processor; creamy and delicious beyond words. I add extra cocoa to the chocolate recipe.
