I've had some apprehension of jumping into Phase II as well. But, I was cheating

on Phase I anyway - not just a little bit, but big time blowing it for 3-4 days because I already "cheated"...

but with Phase 1.5 (as FrannyMae calls it), you can kind of creep into Phase II without feeling guilty
I believe I've actually lost weight since I started looking at it this way. I am getting into the 160's now (don't want to update my bio just yet until I'm sure!!)

I've even had some low-carb beer on the weekend without problems and a roll with my dinner
Had choc. cake on Sunday for a birthday, but I exercised and stayed OP the rest of the day.

It's all about making it work for you. But, I definitely know about it being frustrating. My friend did low-carb last year and lost about 20 pounds - she keeps encouraging me when i am not so motivated -

just keep telling yourself, this will work, this will work - i have to keep at it!!
That must be a great feeling of homeschooling - we will definitely keep an open mind about it - we're about 3-4 years out from having children, plus another 4-5 for them to get to the school age, so we have some time
