Tonight it's homemade vegetarian chili......it was lunch today too....

Last night I split an acorn squash and baked it. Filled it with sauteed onions, mushrooms, celery and some SB sausage. Sprinkled with Parm cheese. Yum. Tasted like fall.

Tonight it was pork loin, done in the crockpot with a dry rub and some baked beans.

Sliced turkey breast I froze after we cooked a bird a couple weeks ago; smashed cauliflower, NS cranberry sauce, acorn squash and some (jarred) gravy for DH.

Last night it was chicken Provençal (2 chicken breasts with diced tomatoes, artichoke hearts and provolone cheese) and green beans. Also a cup of smoked gouda and artichoke hearts soup. The table of 8 ordered 3 desserts to share. I was good and only had a little of the apple crisp....hey they were made with Saratoga apples lol totally worth the splurge.

Lunch was salad and half of a veggie wrap which was amazing!!!

Friday: Spaghetti squash "pizza" Yum

Saturday: mac and cheese; the macaroni is made with chickpea flour and I used LF cheese.
