I like coming to this thread and seeing what people are eating - it gives me lots of ideas when I am in a rut. I had to look up what Dill Pickle Soup and Stifado Stew are!
I always do better when I post here... :D Phase 2 - exact same thing yesterday and today: B - coffee w us soy milk. Chocolate-orange protein smoothie (Greek yogurt, spinach, nsa hot chocolate powder, orange extract) L - Red lentil and carrot soup (this recipe - turned out great), salad dressed with flaxseed oil/lemon juice. Black tea. S - Tofurkey rollups with cream cheese and green onion wrapped around thick bell pepper slices D - grilled shrimp and zucchini with broccoli and quinoa (maybe?) dessert - mandarin orange with 1 serving almonds |

Yesterday I made Kalyn's Kitchen Slow Cooker Recipe for Vegetarian Greek Lentil Soup with Tomatoes, Spinach, and Feta (I have been perusing her Phase 1 lists and I had a bunch of lentils I wanted to use up) and it was DELICIOUS! I actually forgot to add the lemon juice, but the tomatoes provide a nice hint of acidity. YUM! Highly recommended.
