A find from the WW board

  • Cauliflower Alfredo Sauce was delicious. Of course it needed a little more garlic I served it over a mixed bowl of brown rice pasta and Italian beans. Mine was a little too thick but yummy
  • How strong, would you say, is the cauliflower flavor? My hubby hates cauliflower, but sometimes if there are other flavors he doesn't mind it. For example, I made a leek soup before SBD that had 1/2 potatoes, 1/2 cauliflower and leeks, and he had no problems. I tried serving him mashed cauliflower and he hated it...
  • I'm probably the wrong person to ask because I don't think cauliflower has much flavor of its own. I used really good Parmesan and all we could taste or smell was the cheese (and the added garlic)

    I make a faux alfredo sauce for my kids once in awhile that has a cottage cheese base. I'll have to give this a shot also!

  • I can't eat dairy, so I did a variation of this and made "chicken gravy" tonight that was ABSOLUTELY DELICIOUS.

    I took 32 oz chicken broth (swanson brand carton, but I'm sure that doesn't matter), and reduced it by half. Chopped the cauliflower and threw that in with a good dash of garlic salt. Cooked it about, eh, 15 minutes or so until soft, then threw it in the blender.

    It is SO GOOD served over grilled chicken, and so far a good way to trick yourself (and your kids and SO lol) into eating their veggies The consensus here is that you can't taste the cauliflower at all. I'm thinking it's a combination of the garlic and the strong chicken flavor that comes from reducing the broth in the beginning.

  • It's the weirdest thing I had some leftover alfredo with spinach and my mouth thinks I'm eating cheesy creamed spinach.
