Hi all,
I have discovered if i make beans(white kidney, gt northern, black, etc), as I would a vegetable and pasta dish, it is delicious! I cook all my veggies with a little olive oil onion and garlic, add a can of tomatoes, let it simmer, and then add a can of rinsed beans. With parmesan cheese, it is like eating pasta, only more filling and I don't eat as much!!
I usually have a little lean meat and other veggies too(usually roasted), and it makes for a wonderful dinner.
Who knew beans were my friend!

Beans really satisfy me, and I love the creamy texture. I make white bean dip at home with lemon juice, garlic and olive oil and eat some every day as a snack with veggies. Delish.
Love the suggestion. I love beans too. Rarely ate them before SB. My pantry now has more cans of beans than anything else. My daughter thinks it's weird. Garbanzo are my favorite! I sometimes warm up a can of beans, add salsa and RF cheese and eat for a quick supper.
Just wanted to let everyone know that if you like chick peas (garbanzo beans) it is super easy to make them from dried in your crock pot. Garbanzos don't have to be pre-soaked like other beans. They taste so much better than canned and are way cheaper. PLUS you can freeze the beans for later use. Just put any amount of rinsed garbanzo beans (but don't fill it more than 1/3 way up) in your crock pot, and cover with water - use about 2 parts water to 1 part garbanzos. Put crock pot on high and check periodially to make sure all the water has not been absorbed. If it has, just add more. After 3-4 hours nibble a bean to see if it is tender enough for you. Store in remaining liquid in fridge or freezer and just rinse before eating.
Once your stomach adjusts to all the fiber it's easy and quick to cook them in a pressure cooker. I don't even soak overnight but we eat beans at least twice a day so our stomachs are used to them. I usually cook up a few varieties over the weekend - 1 for refried, 1 for meal add-ins, another for soup and maybe some chick peas for snacks.
Like Rikki I have more problems with sugars and wheat
