Whoohoo! The last week of January!

I'm just reheating leftover Portobella Parmesan and gingered carrots & green beans for supper this evening. If I am good today, I'll reward myself with a piece the SBD friendly pumpkin cheesecake pie for dessert.

Ummmm...lasagna with WW noodles, and side salad. It's my DH's birthday....so it's his choice!! I think I'll make myself a large salad, so I only have a little bit of the lasagna .

leftovers night for me too, hooray! We've got lots of lasagna and eggplant lasagna left from the weekend. Along with roasted cauliflower and a spinach salad.

We're doing seared scallops w/ garlic, creamed spinach, and tomaoto, smoked mozzarella, & basil salad. Should be really yummy!!!

That was one of the better spaghetti squash concoctions - sauteed portabellos, garlic, onion, a green pepper & 1/2 an eggplant than mixed the squash in with 1/2 c rf ricotta. Sprinkled it with chopped fresh basil before serving. Yum.

My MIL made the best treats: She washed green and red grapes. While they were still wet, she tossed them in a baggie with a box of strawberry jello powder, then froze them. I can't wait to have them this summer.

Tonight for dessert, I made mock-'blizzards'. Used chocolate pudding, but also added a teaspoon of Hershey's cocoa. It was rich and yummy!
