I'm not cooking tonight but wanted to read through the thread to get some ideas for next week's menus. I'm glad we have kept this thread going -- it's a great place for inspiration. We've got an amazing group of talented, inspired and inspiring cooks here! OMG, filet, crabs legs, carnitas, ostrich!! It makes me feel sorry for anyone not on SB or dieters that think they have to eat baked chicken breast and steamed broccoli every night.
Tonight I'm having leftover shrimp stir-fry. I've also got a tray of roasted root veggies ready for the oven that I'll probably hit for lunch. Also wanted to let you know I tried the soy chorizo earlier this week in a Taco Bake - it's great! Can't wait to try some other stuff with it. Thanks for finding it and posting about it Cyndi and cottage! I'm glad you all are enjoying the spaghetti squash recipe! I've got a ss in the basement so that's a good idea for next week. Cyndi did you ever post the curried carrot soup recipe? After thinking I didn't like curry flavors for a long time, I am developing a love affair these days... freshman, there are so many favorites, it would be hard to send them to you. But usually when we find something we really like, we post it on the recipes section of the forum. Something that is stickied is a tried and true fave, and other ones that have a lot of views or high star ratings are also a safe bet. It will also depend on what appeals to your tastes. BTW, Phase I is short the introductory phase to South Beach, when grains and fruits are not eaten, Phase II is the main weight loss phase, when whole grains and fruits are re-introduced. There are stickies on these in the FAQs section, and if you plan to do SB, try and get a copy of the book to read so you will understand the reason for these phases. |
It is cold and snowing here today. Perfect day for a big pot of beef barley soup - with extra veggies of course! Probably add a few multi grain rolls and a dinner salad to round out the meal.

Schmoodle - the curried carrot soup is one Beachgal posted awhile back :) It's become a favorite though I was very unsure about it and only tried it because we had carrots. I love the recipe threads!

If it's the weekend it must be crockpot food! I found anasazi beans from Bob;s Redmill so I'm making the anasazi bean stew with soy chorizo. Yum.

I picked up a cheap bag of pre-chopped collards yesterday, one of those use right away deals. I sauteed them until very tender and then mixed them into the crockpot stew. It worked really well.
Since I'm in crockpot mode tonight I'm going to make a vegetable curry in the crock. I've got eggplant, chard, & garbanzos and might throw the cauliflower in too, just so we have leftovers :) if it is good I'll share the recipe (I'll try to measure this time). |

Yesterday I wanted something a little special so I made boneless leg of lamb stuffed with spinach and feta cheese, with greek salad. I roasted a couple of potatoes with the lamb for DH.
The other day I made a turkey "tenderloin" roast from Aldi's. It was pretty good but kind of salty. I've been using it to make a big salad for lunches. Tomorrow I'm going to make a big pot of minnestrone. The weather is awful, and I really am drawn to soup. Tomorrow will be my first weigh-in since restarting last Monday. I think it'll be pretty good. I'm a slow loser so don't expect a huge drop, but even a couple pounds will be great:carrot: |
