Jen, I've seen those as well! Yummy and definitely a nice break from making bread from scratch!
Tonight we're having pastitsio - although I'm doing a lot to lighten it. I'll probably make a spinach salad and some crusty bread to have with it. |

I made the spaghetti squash deep dish 'pizza' for lunch. YUMMO!!! Even hubby loved it. Next time, I'll use more spaghetti sauce.
My spaghetti squash was wet after I added the salt, pepper, egg and parm cheese. I let it hang out in a collender to drain some of the excess moisture. It was wonderful! We'll definitely have it again. |
Tonight is broccoli, hot cherry peppers, and grape tomatoes sauteed in olive oil and garlic over whole wheat pasta and salad on the side.

We changed our mind and skipped the shrimp tonight. We had grilled chicken breasts, sweet potato "fries", orange slices and a salad. I also served whole wheat egg noddles with the kids in mind. I took 2 forkfuls to taste, not bad.
Zeff - I need to get some of those bread recipes from you... or maybe I don't... bread is my weakness!! |
Jen - bread is one of my favorite things to make. Something about the kneading of the bread is therapeutic and there is nothing that makes the house smell as good as home made bread.

I made Lemon Chicken with brown rice. The recipe called for egg-washing, breading, and deep-frying the chicken, but I didn't want to add all those calories, so I just peppered the chicken breast and put it on my George Foreman grill to cook partway while I made the sauce in a separate stir-fry pan. The sauce is equal parts water and brown sugar, boiled on the stove with slices of fresh lemon (peels on and everything, but try to remove the seeds) until it reduces to a syrup. Then I took the chicken off the grill and tossed it in the sauce to finish cooking and saturate in the sauce a little. Served on top of the brown rice, it tasted just as good as anything you could get at a Chinese restaurant. Plus, according to the recipe notes, one chicken breast (coated with the sauce, but not drenched) and a cup of rice was less than 500 calories. That doesn't sound so great, but it's very satisfying if you're craving something Chinese-ey. Plus, it's super-filling.
I found it in Cooking for Two magazine, which you can find at Walmart newsstands. I like that magazine because everything's designed to result in two servings, which makes cutting recipes down to one serving a lot easier for me. |

Cyndi, Isn't that spaghetti squash pie fabulous! I sautéed some spinach with red peppers, garlic and onion, and spooned it over the pie before topping it with the sauce and cheese, and it was so good!
It sounds (sic!) like several of us will be making baked beans this weekend. :D I make mine a lot like Cyndi's, except I use a small can of tomato sauce instead of tomatoes, and add a spoonful of SF ketchup. And lots of onion! |
Looks like I am going to have to try the spaghetti squash pie ;) but not this week- unfortunately its apparently going to take some digging for me to find any around here- last like 5 times I went to the store the squash was either gone or crap. oh well...

All the recipes people have mentioned on this thread sound really great - if anybody wouldn't mind taking the time to PM me their fave recipe, I'd be eternally grateful! I need healthy new recipes for a healthy new year.
Do 'PH1' and 'Phase 2' refer to the Atkins Diet, by any chance? |
Tonight is chicken breast sauteed with onions, peppers, spinach, grape tomatoes, and balsamic vinegar on a whole wheat wrap. Maybe with some melted provolone cheese on it. Maybe some green beans and a salad on the side.
