DH got a smoker for Christmas, so we are having smoked chicken with broccoli and cole slaw (very light on the mayo). I can't wait to try the chicken; I've been smelling it all day!

We wound up with Laura burgers on Arnold whole wheat sandwich thins. I sliced up squash like FF and sauteed it in the skillet with EVOO, garlic, and s/p. No one thought they were fries but they ate them anyway. :)

Tomorrow night I'm making a portabello philly cheesesteak sandwich using whole spelt rolls (half per serving). Cheesesteaks are just about the only meat thing that I occasionally crave and haven't found a good substitute for, so I can't wait to try these. With a rich main course we will have some type of dense, low cal veggie - either roasted brussels or sauteed cabbage with garlic & fennel seeds

I'm currently on Phase 1 and I find that celery sticks plus salmon dip makes such a great snack :)

Tonight I'm making cracked pepper Fillet Mignon w/ steamed broccoli, smashed cauliflower, and a green salad.
Made the SBD peanut butter cups last night for the first time. OH MY GOODNESS.....they are TOO GOOD!!!!

We're rushed tonight so I'm reheating leftover Cajun Sausage and Beans. Good and easy.

Chelby - It would depend on the ingredients. I have the dining guide at home but I'm in the office today. You might try asking the restaurant what ingredients they use (especially look for thickeners)

Ended up cooking a small pork roast last night so am going to throw it in the crockpot for a while and make carnitas. My resolution for 2009 is to try recipes I've never done before. Thanks to TwinB for mentioning these in the daily.

new here, but not to south beach, tonight was greek rotisserie chicken wraps (whole wheat wrap, ff feta, nf greek yogurt, hummus, roasted red peppers, onion, lettuce) with sweet potato fries in the oven with roasted veggies.

Okay, I'll admit...I'm not exactly sure what a 'carnita' is, I looked it up myself. I guess it's just the filling?

Anyhoo, mine were fantastic!! I put the meat on a whole grain tortilla in the skillet to melt the bit of cheese on it, then added lettuce, tomato, and onion (and a touch o' guac and sour cream!). They were DELISH!!

This was a fairly lean cut of beef I used today, but I'm sure there's got to be a way to make it with chicken too. MMMMMMmmm...
