What's for breakfast?
I know there's a special thread for breakfast ideas, but I wanted to know what you all are eating for breakfast this week. Also, if you're doing ph1 or ph 2.

p1... 2 egg omelet with 1c spinach and 2 large mushrooms. .5oz cheese, and 2 veggie sausages! YUM :)

I'm in P2 and I am having nothing for breakfast today except for water. I forgot my breakfast at home. Duh. Ha!

I am planning to do post-vaca Ph1 this week but I haven't grocery shopped yet, so my breakfast was phase II - peanut butter toast and chocolate cheesecake smoothie.

P2 -- I had the asparagus omelette with goat cheese from one of the books or cookbooks -- can't remember which. It is delish!

I had forgotten I bought coffee till I read everyones posts! I better go make a cup before it gets too warm for me to drink it! I only like coffee in winter months unless it is iced :)

I'm doing a modified phase 2. This morning, we had oatmeal with an added egg and dried fruit. Strawberries and greek yogurt as well.

Breakfast this morning was oatmeal cooked in milk with a tablespoon of natural peanut butter, 1/2 t. Splenda, & 2 sliced strawberries. I call it PBJ oatmeal :)

My favorite is my whole grain pannycakes. I'll often make them for the family on the weekend, then cook the rest of the batter...and put them in the fridge. I've actually grabbed these to bring on airplanes (have you ever tried to stick with SBD in an airport for breakfast?!?!), or a quick snack or reheat them for breakfast (I almost like them better cold!!).

Phase II. This morning I had a whole orange and a slice of pumpernickel toast with Laughing Cow and tomatoes.

Wow ladies, some of these sound really amazing! I may even have to pm some of you for recipes.
The bf and I just started Phase II today - well, last night actually after we got back from grocery shopping for our new higher-fiber carbs. (Tough for him, as he can't eat gluten... high fiber and gluten free don't go together that well!) Like SBD Sass I forgot breakfast this morning, but I'm planning to have a breakfast sandwich tomorrow using my new Fiber One bagels (10g fiber each!), an egg and a slice or two of Canadian bacon. I also want to try some variation of peanut butter oatmeal, that sound yummy! Maybe a little cinnamon and splenda - even a dash of cocoa powder if I'm feeling decadent. I'll probably add some cottage cheese or a bit of ham on the side to protein it up a bit. Anyone tried just adding protein powder to their oatmeal? Thanks for the Phase I ideas too... I got real sick of ham and cheese omelets these past couple weeks and with the holidays coming I foresee having to spend some time revisiting Phase I to "recover". It just isn't Christmas to me without ***food-porn deleted***. ;) |
Betsi - are the new fiber one bagels whole wheat?

Hmm... no, I guess not. Sorry, I'm new at SBD and I was in a rush at the store. I just saw 10g of fiber and figured I was good to go. But they are labeled "Multi-Grain" and the first few ingredients are "Water, enriched flour, whole wheat flour, yeast, vital wheat gluten" (etc) so I guess these are not so good. They don't seem too bad, so I'll finish the package - but I also won't be buying them again. Thanks for the catch - what a bummer, they're tasty.

multi-grain is really tough sometimes...it really makes people feel like they are eating something better than just regular white flour, but most of the time it is just white flour with a few additions. When looking at breads and other starches, look for whole wheat before fiber content. 100% whole wheat breads and pastas have more fiber naturally than refined wheat breads and pastas.
Also, remember that only 1/2 the bagel is a serving. I would stick to just half the bagel at a time, especially being new to Phase 2. |
I made the crockpot steel cut oats last night and ate them this morning with Vanilla SF almond milk and 1 Tbs of almond butter and cinnamon. Wow, they are really creamy and good when made this way! I plan on making this regularly.

This morning I had oatmeal cooked with 1/2 a diced apple, a few golden raisins and some walnuts. Wow, that seems so long ago!

P2 here. I usually have scrambled eggs with cheese and canadian bacon mixed in and a slice of 24 grain whole wheat bread. I have a hard time with omelets and eggs any other way besides scrambled. Tomorrow I may try a smoothie though.

I'm not a big egg eater but I'm very willing as a result to eat unconventional breakfast food.
I had 2% cottage cheese and cherry tomatoes - about 1/2 cup each. Not to highjack the thread, but I'd be very interested, SBD Sass and Betsi, on any comments you have about your eating experiences the rest of the day after missing breakfast. |
P1.5 here. Today I had sauteed onions, garlic, mushrooms, zucchini and parsley with an egg along side it..... sooo yum!

All this talk of oats.. I might go and soak some in the fridge overnight so they cook faster

Hmmm - have not had breakfast yet but am going to have my first oatmeal of the season with yogurt and a chopped apple plus cinnamon. Phase II.

P2 - one egg omelet with lots of green peppers, refried black beans & a little rf cheese. Homemade refried beans so it should be fun for everyone in staff mtg (speaking of leaving the garlic in ;) )

I made some ww french bread yesterday and plan to make some ricotta stuffed french toast with strawberries.

I am a huge fan of Oatmeal with PB, splenda and a dash of SF syrup. This morning though was french toast topped with PB and of course SF syrup. I find that the PB really helps with the "full" feeling until snack time. Oh and I am "maintaining" for the most part.

First day of Ph1. I had a BIG breakfast of spinach, cheese, and turkey sausage omelet. So yummy and I am stuffed.

Another 2 egg omelet this morning with veggie bacon, tomato, spinach, and maybe avacado if I feel like the one I have is ripe :)
P1 day 2 Maybe that will be tomorrow- Cyndi's breakfast sounded so good I did 1 egg with refried beans and a few tomatoes with chilis and a little cheese- YUM!!! Thanks for the great idea cyndi- I don't know why I never thought of refried beans on eggs, black beans yes, but never thought of refried and its great! Almost like a breakfast burrito on my plate! Oh and I still had my 2 slices veggie bacon.. |
Ok, did better for breakfast this morning, although it was still late in the day because he has a bad cold and I'm trying to fight it off so we slept in.
I had a cup of coffee with a packet of Splenda, a ham steak (kind of big... maybe 4-5 oz, oops!), and my first bowl of steel cut oats! I had it with about 1.5 tablespoons natural peanut butter, a packet of Splenda, and a sprinkle of cocoa powder (half a teaspoon or so). It tasted just like Reese's peanut butter cereal, but was WAAAY healthier. Awesome! :dancer: Sweetie made his oats with just a half packet of Splenda and a tiny bit of vanilla extract. He seemed to like it, even though he can't taste much with this cold. SB has really expanded our horizons, but especially his. Now we're just keeping our fingers crossed that he won't get sick. (He is gluten intolerant and while oatmeal is technically gluten free it often gets cross-contaminated in the harvesting or manufacturing process. Hopefully it's less likely with steel cut.) |
My breakfasts are boring, M-F I almost always have a 1/2 cup of 2% cottage cheese with splenda and cinnamon mixed in along with a V8 or Tomato Juice. Add a cup of coffee with powdered milk (I as soon as I get up and one with breakfast and the milk I use accounts for1 milk serving for the day). But it’s quick and easy and I can keep it in the refrig at work, no one will steal it and then I can munch while I’m working.

My favorite breakfast is the oatmeal pancakes. I add cinnamon or pumpkin pie spice. I make my own berry syrup, either blueberry, black raspberry or blackberry. Days I have to work I eat oatmeal with fruit or eggs. When I was on Phase 1, I ate the ricotta pancakes or the ricotta crepes. Thank God Phase 1 takes away the cravings. No more pastries for me.

Rikki - you should see how many jars of salsa I have in my closet. I buy them every time they are on sale.

What kind of salsa do you buy Cyndi? I never buy it, I always make my own- usually just using tomatoes with green chilis, plain diced tomatoes, little lime juice some onion and garlic- and if dh isn't eating it cilantro- He just can't stand the stuff! anywho- I blend about half together in the blender and then put the other half in and barely blend it so there are still some chunks in there- tastes just like from our favorite mexican restaurant!
I have had a hard time finding any store bought without added junk! thats why I was curious! |
Depends on what I'm using it for. When I need good salsa I buy Hedgie's, a local brand that really rocks. For dumping on things (I do use a lot) I'll use Muir Glen, Amy's, or Green Mtn Gringo when I can get them. Today I picked up a bottle of Frontera. Our co-op also has their own fresh salsa in the deli case.
I should make my own but the fresh tomato season is so darned short around here! |
Cyndi - fresh salsa freezes pretty well....I canned some of it a few years back as well. Canned keeps better, obviously.
And, if you're ever in the area....feel free to stop by for a night or two. We're totally normal... ;) well...except for DH who is currently dancing around in DS' room with jammie pants on his head... I'm in the process of making crock pot steel cut oats. In the morning, I'll add an egg, some dried cherries, pecans and cinnamon. It is one of the best breakfasts I've tried for keeping us full! It keeps DH going from 7 until close to 1 when he comes home for lunch...now THAT is a feat. |

Cyndi, Eden Organics makes a dried fruits sweetened with apple juice. That's the brand I use. ;)
