Speaking of odd, I tried this a few times and it's not too bad, although I wouldn't want it all the time -
Mix a can or pouch of tuna with a few spoonfuls of dijon mustard and chopped raw veggies of your choice.
My fav. these days is equal part mayo and plain yogurt
add a heaping TBS of curry powder, salt/pepper and whip it together.
I then add it to tuna, finely chopped onion & celery.
Also - you can make "potato" salad by steaming (microwaving) cauliflower, cut into cubes, and dress as you would potato salad. I normally sprinkle the hot cubed potatoes with vinegar to get the vinegar flavor into the potatoes themselves. This doesn't work with the cauliflower, but everything else works. You can do it with frozen cauliflower, but I think fresh cauliflower works better.
