Weekly Chat - January 17th - 31st

  • Good Morning,

    I am home today, DD is sick and was up most of the night with a fever and a sore throat. This morning I was so tired I couldn't even think about starting up the PC. So here I am now LOL. Its sooooooo cold out, we had an inch of snow last night, makes it pretty looking outside but it can melt fast as far as I'm concern lol.

    Weekend was nice. I did a little shopping. I returned a sweater to Macy's and got a new pair of dress pants. They are a size 10! It makes me happy to see that, but the rest of my pants are all still size 12. Just this style is cut big. I won't be happy until all of my pants are a 10. They were on sale to boot, so when I returned the sweater I got the pants and $7.00 back. Next was Bath & Bodyworks. I got some clearance Vanilla Bean Noel Shower Gel, 50% off. Last stop was Target, where I got myself a new pair of adjustable ankle weights. They are neat. They adjust from 1-5 pounds each so there is room to grow with them. I exercised on Sunday, did my weights, cooked and did chores. Christmas also has been put away!

    I cooked everything this weekend. The salmonw as good last night. I also made some baked fried zucchini and some butternut squas with onions and pecans. It was a nce change of pace. Most butternut recipes seem to be on the sweet side. This one wasn't.

    I got some more of the LC meals over the weekend. They were on sale here for 16.62 a pop! I coulsn't resist. Aww, sorry to hear your salmon wasn't good. It's true that it doesn't have as much sauce as some of the other meals. You might like the chicken pecan one.. never know. My gripe with it was that it had too much rice and the rice was very bland. Not nearly enough sauce for all that rice and the rice tasted like it was just cooked in water w/o any seasonings. Also, the carrots were these weird little mechanical pieces. The chicken was fine and the peas were fine. The sauce was fine.. it just needed more and I think I would have liked this one better. I have four other flavors to try in the next two weeks: lemongrass chicken, rosemary chicken, chicken in peanut sauce and another one that I cannot remember what it is. I know it's not the pork because I don't care for cherries. Sorry to hear that the FoodTV fan forum exploded. I remember reading all sorts of posts about this forum or that forum and I remember smarmy flaming posts about the new forum even before the old one had closed. You are right Suzanne. Those foodies were vicious!!

    Leenie, glad you planned your meals. It one less thing to worry about. I only got the email nine more times over the weekend. You are right. it's like the Energizer bunny. What's wrong with Miss G? She got a flu bug or the sniffles?Fever? Take care of the munchkin.. screw the office. I am guessing you are home today since I haven't heard from you yet. Get some rest while you are taking care of G. Dirt wil wait.

    Well I need to get busy, or pretend I am busy at least. Happy Monday ladies.!

    Ooh Linda, size 10 pants!!! That must be exciting! I'll never be a size 10. There is no amount of diet and exercise that can reduce the size of a Barnett Butt! It sounds like you did a lot of nice - and fun! - shopping! Your butternut squash sounds good! I never cooked butternut squash until this past Thanksgiving, when i found a recipe online for a casserole using butternut and onions, with a topping of bread crumbs, white cheddar cheese, and rosemary. It was delicous!

    I think Lean Cuisine had the right idea with their new line of dishes, but they need to go back to the kitchen

    I'm off to the kitchen now. We are creating original recipes for the book, and we're working on the low carb chapter now. And you know how I enjoy low carb foods

    Ahh finally the kids are outside playing in the snow and I have some peace and quiet. Its 18 degrees out nd snowing like mad. We are expecting up to 15" of snow today and into tomorrow.

    Linda I made your cottage cheese loaf, it smells VERY good, can't wait to try it tomorrow.

    Suzanne, a few years ago we grew butternut squash in our garden, I didn't know what to do with it so I made some butternut squash pies, kinda like a pumpkin pie. Since then I am hooked, those pies came out WONDERFUL, better the next day and cold. Even the kids snarfed them down. Dangerously good if you know what I mean. In the grocery store here they sell it in the frozen section already cooked and like puree style. I love it, I nuke it and just sprinkle it w/salt..YUM! DD and I are feeling okay, thanks for asking. She still has a cough and runny nose, guess it will take some time before it goes away.

    I had the food network on b/4 and they had a special on candy bars.... jeepers, I didn't know that the snickers bar and most of the candy bars you see today were made in the 1920 - 1930's ??

    Today I am making home made pizza. The dough is rising on the stove right now. I used regular white flour since DH requested it to be..."nothing funky" lol.

    Lunch today was 2 trader joes apple chicken sausages yum.

  • This week is FLYING! I've not done very well with my diet. It's "cook low-carb" week for the book, and while it tastes like heaven, the high fat and calorie content has caused a slight weight gain It's all or nothing with that type of plan. In the process of recovering, I came up with some really GOOD Mediterranean style seafood dishes! So that part was fun

    Oh Leenie, the food network can be dangerous! We should start the Healthy Food Network Some of their programs are really good, but then they wheel out the candy bars or the dessert shows, and then my train of thought is completely broken lost.

    The only winter squash I've ever grown was the spaghetti squash that took over my yard - and fencing! Wow it grew fast. I prefer to grow summer squash and love good old fashioned yellow crook-necks. It's so hard to resist the urge to dredge and fry it though!

    Been up since 4:30. DD decided to get us all up b/c she wanted to watch cartoons

    Suzanne, I love watching that show Unwrapped. For some reason, I love to see how things are made/manufactured. Even at work (Pharmaceutical) I love to go to the manufacturing side of the plant and just watch how them make things. The history and efforts of what goes into a product, no matter what it is really gets my interest. One thing that caught my eye during that candy bar show was the fact that the candies made in the 20's to the 70's were 1/2 the size they are now. Its a shame what the food industry has done to us, knowing or unknowingly.

    All this talk of squash, I think this year I'm gonna try to grow a few different kinds and of course I'm going to grow my grape tomatoes. Those things are easy to grow and plentyful. I had harvest of them until late october.

    Cooking LC is a challenge for sure and your so right, its all or nothing with that plan, no happy medium. Thats why I had a hard time staying on it.

    I have to start thinking what to make for this coming week....think think think !!

    Ohh I have some of that pumpkin chili still in the freezer..... thats one dish
    DH wasnts fish, so I'll get some of that, and he also wants a pot roast. I do have a roaster ckn in the freezer so I'll prob take that out and do something w/it.

    It's going to be another great day today. It's a Saturday and those are always wonderful!!

    I've got a less busy weekend than last weekend but I've still got lots to do. I bought a carpet cleaner at Kohl's this week.. on sale reg 259 for 129. My carpets are so gross it isn't even funny. I am going to try and test this out today, but no promises. If not this weekend, then next for sure. Kitty cat is going to be mad with all the noise and yet another Darth Vacuum around the house. I've got lots to cook this weekend. On the menu is: Chicken, Sausage and Zucchini Pasta, Alternative baked salmon and tofu parmigiana. Veggies are eggplant, spinach, tomatoes, zucchini and maybe sketti squash. So today will be domestic goddess junk I guess. Along with Laundry. Ick.

    Tomorrow is church and installation of council. And yes, that would be me. I agreed to do this even though I didn't know I was agreeing to do this. I was actually agreeing to head up the new Tech Team at church and didn't have a clue that included being on Council. Imagine my surprise last weekend when I came to church and my name was on the ballot. I prayed a lot about it this week and due to the confusion of what I had been asked to do vs what I really was going to be doing I was given the opportunity to decline the position. Anyway, I've decided that this is where God must want me so I'm going to do it. Of course I'll be complaining about it over the next year. After church is a council meeting and then I'll come home and finish up my cooking for the week.

    I'm adding a 6th day of exercise starting this week. I've been putting it off far too long and now it's time to put up or shut up. I'm adding in a super easy 4 mile WATP instead of something challenging. I want to ease into this 6th day as painlessly as possible. So I'll do 60 mins WATP on Saturday and then my 73 minutes step tape on Sunday along with weights.

    What's everyone else doing this weekend? Anyone having fun? I'm going to post this and toddle off for some more Happy Saturday!!
