1. Is there a limit on how many carrots to eat on Phase 2? The GFGCG says a serving is 1/2 cup, but is that the amount we are allowed to eat a day or is it unlimited? I've been pretty much avoiding them because I was afraid to eat too many. I know in the past, they weren't allowed on Phase 2, and was wondering if that meant they are now limited...but the GFGCG says they are "good".
2. I found some great organic bean dip with no fat and no sugars. Just beans and spice and such. Any ideas for something without starch that I could dip in it? Maybe bell peppers? I have a hard time finding things to dip in my dips! I guess I am so used to crackers and chips!
This seems to be the question of the hour. I asked this about legumes.
All the veggies listed have a serving size of ½ cup, yet we are supposed to eat 4½ cups per day.
My take...the serving size is there so you can compare one item to another...starches, fat, etc...the amounts you would get in one serving.
The GFBFG also states that w/veggies you are to consume liberally.
To me, that doesn't sound like you should limit to ½ c per serving.
Mybe try reading page 24 of the small gc/bc book it talks about recomendations are guilines not hard fast quantifiers, the way i understood it was that it depends on the amount of wiehgt you want to loose or how your body reacts. Hope that helps
Thanks, those are good suggestions! I guess the reason I worry about carrots is because in the original SBD book, Dr. A did not allow carrots in Phase 2. Now, he does. I was not sure why he originally did not allow them and whether this had any effect on how much we should eat.
Hi Laurie: Ok I am not sure about the carrots, all I know is that they are better raw because of th sugars that are made in cooking....or something.
About the bean dip, I LOVE to dip peppers, nice and crunchy and it satisfies that crunch need I have Also if you are eating more than one serving of starch a day, you could cut up 1/2 WW pita and bake it (maybe even with a little olive oil and spices) and use them kind of like chips. My aunt used to use them to dip hummus in and YUM!! HTH

I love pitas baked! I'm only on one starch a day. When I get off, I plan to make the chips from pitas...the recipe I have takes a bit of olive oil (1 Tbsp, maybe) and you squeeze one clove of garlic in it with a garlic press. You stir it up and then brush it on a pita cut in triangles, set on a baking sheet. You sprinkle the top with salt, and then bake it at 425 until golden brown. They are amazing and definitely wonderful with hummus!
That sounds AMAZING. Can't wait to add more starches!! How have you added them, did you start with fruit or did you go to bread or pasta etc? I am starting phase 2 today and don't know what to add!
I know that in a nutrition class I had to take in college that we were taught that in order to bring blood sugar up in a diabetic patient we would have more available sugar if we had carrot juice instead of orange juice. It's common to give a patient a glass of OJ with a couple of packets of sugar in it to get their sugar up fast. The nutrition teacher said "give 'em carrot juice instead". That would be my guess as to why carrots were avoided. For those of us that have sugar addiction issues, why make it worse with carrots?
I do enjoy them occasionally on salad, but I'm careful with them because I do NOT want to wake up the sleeping sugar monster!
well i don't know the carrot answer i stay away from them since i follow the old rules from the book i have.
but for dipping i also had a hard time finding things to dip other than chips and crackers. i use almost any crunchy veggie. celery sticks, broccoli, peppers etc. and they do satisfy the crunch.
I found the sticky that Ruth mentioned. It said that carrots were originally outlawed on Phases 1 and 2, but allowed in moderation in Phase 3. Now, it says, they are allowed. But does that mean, allowed in moderation? Still pretty confused. Wonder if anyone is a member of the SBD site and could ask there? Makes sense what you are saying about the sugar. Sugar is high in tomatoes too, and they were originally limited. However, they are high in acid, which reduces the rapidity of absorbtion of the sugar, I would think. Carrots have a lot of fiber, so I would think that would slow absorption...ack, my head hurts!
Ozziesgirl, I added in three fruit and two starches a day, all at once. Yes, a bit overboard! I was in my DHs hometown for a funeral with tons of temptation everywhere, so I decided to do it that way rather than freak out. I came home to find that I had lost 6.5 pounds. Then the weight stopped going down, so I reduced the numbers slowly and have settled at one fruit and one starch. If the numbers do not start going down more soon, I may have to give up one of them, which I would hate...but I have to do what I have to do. *sigh*
Yup, crunchy veggies seem to be the only thing to dip, Jodi. I just wonder which veggie would go with bean dip. Jicama, maybe? Hmmm...
