Talking Lwl Cookbook

LWL, I had an inspiration yesterday.

I saw the bb recipes thread and realized that most of the recipes on it were personal favorites or tips of the people who posted them. I started bundling them and making a "lwl cookbook" for myself and then I thought: why not bundle for all of us? I know most of us are struggling daily to be good to our bodies and good and easy recipes are hard to find (especially for keeping oatmeal and eggwhites interesting day after day).
I got some positive backfeed yesterday so I'm going through with it. It may take some time, though, before I can send you your copies, so don't be too hard on me.
I would also like to ask everyone who's interested to PM me so I know what to expect beforehand, and Mrs Jim to sticky this if she thinks it's a good idea.

I'm looking for your inspiration on the following clean eats bb categories: Tips, take-with-you meals, snacks, Meat, Poultry, Fish, oatmeal, eggs, Sweet tooth, soups, salads, vegetables, "o god they're coming over for coctail" snacks, shakes and smoothies, vegetarian, clean bb eating out if possible: chinese, italian, mexican, other.
If you have any information on contents or type of recipe (e.g.bfl, low carb), add it too.
If it's something you bought commercially, make sure we are allowed to use it.

I will edit everything on this thread and make a bundle of all this to the benefit of us all.

Try to only use this thread for recipes or additions to other people's recipes, so it doesn't become cluttered. PM me for questions.
If every one of us adds even only one recipe or tip per category, we'll never get bored again with clean eats!

Like this:

Egg white omelet with sweet papika powder and mushrooms.

5 egg whites (or 4 egg whites + 1 whole), beaten (though I'm to lazy for that)
1 cup sliced mushrooms
salt, sweet paprika powder
cheese slices (optional)

Chuck mushrooms in non-stick skillet with salt and paprika powder, brown.
Pour beaten eggs on top (and cheese). Let bake (covered) until top done.

Let cool for a few minutes. You will then be able to lift the omelet out easily as it shrinks while cooling.

Calories: about 140 (w/o cheese), with (normal) cheese + 100

Keith Klein's Turkey Meatloaf

Ingredients

1 lb ground turkey breast
1 c chopped onions
4 egg whites
1 c chunky salsa (I like the Rotel Spicy Italian tomatoes)
1/2 c uncooked oatmeal
1 package knorr's Vegetable Soup mix
1/4 tsp.pepper
1/2 tsp. garlic powder
1/2 c. ketchup

Procedure

Mix all ingredients except ketchup until well blended. Place in a meatloaf pan. Cover with ketchup. Cover and bake at 350 degrees for 1 hour. Makes 5, 4 oz servings

I got this recipe from Ledom over at Body/Eating Life forum...We had it tonite and DS actually liked it. I made it with spicy salsa...

GG--- I almost fell over laughing this morning when I made your above omelette! Instead of reaching for the Paprika I took the Pumkin Spice out... You know my eyes aren't the best at the best of times... It smelled awesome and was actually very good!

Thanks! here's another one

Healthy filling sweet snack
1. cup low fat cottage cheese (no salt), preferably creamed
2. Natural vanilla sugar (packet), to taste (not the whole packet!)
3. (optional) Splenda
This is also a very nice dip or base to add fruit to!

OR: Add no fat whip cream powder and it becomes mousse....

Tuna Salad Nicoise

4 cups small red-skinned potatoes, boiled, cooled and diced
4 cups whole green beans, fresh or frozen, cooked and cooled
2 tomatoes, chopped (or you can sub. sun-dried or cherry)
16 Greek olives, pitted and chopped
4 cans chunk tuna in water, drained

Divide into 4 equal portions, toss each with 2 T. dressing. Chill before serving, then enjoy! Can also add chopped hard-boiled egg whites to boost the protein.

Dressing:
3 T. white wine vinegar
4 T. olive oil (or incorporate your flaxseed or Udo's oil here)
1 T. Dijon mustard
1 clove garlic, mashed w/salt
Pepper to taste.

Tidey's Pierogie Casserole
(an absolute staple in my diet!)

4 cups cottage cheese
4 small/medium potatoes or 28oz. sliced raw potatoes
2 egg whites
3 slices FF cheese (1/2 cup shredded)
1 large onion
2 t. onion powder
salt and pepper to taste

Chop onion and caramelize it in a frying pan with 1tsp oil.

Mix eggs and cottage cheese with onion powder, salt and pepper.

Peel and wash potatoes. slice very very thinly into disks. Lightly oil a large casserole dish with olive oil. Cover bottom with a layer of potato disks. Salt, pepper and sprinkle with 1/3 of your hard cheese. Top with a layer of 1/2 of CC mixture, and repeat. Top with one last layer of potatoes, hard cheese and then spread carmelized onions over top.

Bake, covered, at 200C/350F for 40mins, then remove cover and bake for another 20 mins or so to let the water evaporate.

Makes 4 servings.

JC's "Apple pie"

1/2 cup dry oatmeal
splenda and cinnamon to taste (1/2 T. Splenda, 1/2 t. cinnamon)
a small apple, peeled and chopped into small pieces

a portion of CC (1 cup)
splenda and cinnamon to taste (1/2 T. Splenda, 1/2 t. cinnamon)
a dash of milk

Place the first batch of ingredients in a big bowl and fill with hot water until it is all covered (I used 1 c. water here). Microwave on high for 2 minutes and then mix and add more water as necessary and nuke it again until it's all soft. Usually 3-4 mins in total. Place in fridge to cool slightly. Whip up CC and remaining ingredients in a blender with the dash of milk until smooth. Once the apple mixture has cooled enough to eat (so still warm - about 5 mins in fridge) add the CC mixture on top and then eat.

Makes 1 serving

Sounds like a wonderful idea to gather recipes. I think this is a great summer recipe ck it out!
Strawberry Pie
1 LB. STRAWBERRIES OR 1 QT.
1 SM. STRAWBERRY SUGAR FREE JELLO
1 SM. JELLO VANILLA SUGAR FREE PUDDING MIX
1 1/4 CUPS WATER
CUT UP STRAWBERRIES INTO A 9" PIE PLATE MOUNDING IN THE CENTER. PUT WATER , JELLO MIX, PUDDING MIX INTO A PAN AND BRING TO A BOIL FOR 1 MIN. POUR OVER STRAWBERRIES. PUT IN REF. FOR SEVERAL HOURS SERVE WITH FAT FREE COOLWHIP.
WWPTS= 1/6 OF THE PIE NOT SURE OF CALORIES BUT CAN'T BE TOO BAD!!!!!!!!!
