The mashed potatoes in a martini glass sounds cute, but it would be impractical for the guests to eat (because you have to provide spoons too, and they'd have to set down their glasses in order to eat). I would do it in those wonton soup spoons instead:

And, you can get them in biogradable bamboo and just throw them away (which is what we had), that way you're not stuck with 30-30 spoons!
Might I make a suggestion? You can't go wrong with macaroni and cheese! I have a fantastic recipe for gourmet mac and cheese if you want it. It has penne pasta, gruyere, cheddar, and asiago.
I think it's a fantastic idea that you're downsizing your wedding. It'll be a lot more intimate and cozy, and I love the idea of h'ordurves and desert. Are you still going to do a cake or cupcakes?
Also, I have another suggestion for an h'orderve. Spinach and phyllo dough triangles. You can buy them in bulk at Costco or other grocery stores:

We had our caterer make those and they were gone in like 10 minutes! There's also crab cakes that you can buy frozen, shrimp tempura skewers, you don't have to make everything from scratch!
I would probably nix the chicken skewers because they don't have much flavor unless you do it Thai-style and add peanut sauce for dipping. Which is delicious.
DEFINITELY stick to wine, beer, soda, and water. You could also add a couple of bottles of champagne for a toast. And, if you want to be really fun, you could do a keg of one beer. My mom's friend got remarried and it was like a 100-person wedding and they had three kegs and it was a blast.
