Yes it will work. I don't know the specifics of the SB diet but i do know its very similar to Atkins and the rest of the low-carb programs.
The reason why these programs work so well is because you are limiting carb intake. When you consume a carb-rich meal, even if it is considered "healthy", will raise your the glucose level in your bloodstream quite rapidly.
This is dangerous since it will cause your pancreas to rapidly produce large amounts of insulin to help neutralize this excess glucose.
Insulins job is to remove the excess glucose out of the bloodstream and convert into into glycogen. Your body will store glycogen in the liver and muscles, but they can only store so much. Once those storage units are full, the excess glucose is stored as fat!
There are two types of carbs, high-glycemic and low-glycemic. I would assume SB diet is allowing you to consume low-glycemic since glucose is released slowly, and this gives enough time for your body to use it up before it is stored as fat. The opposite is true with high-glycemic carbs. So you won't find much if anything, that is high GI in these diets.
You don't need any diet book, just start choosing your food better and you'll be fine. Try to limit your carbs to vegetables and one or two pieces of fruit a day (preferably low glycemic fruits), stay the heck away from all processed carbs and sugar. These are the ones doing the damage.
I don't see why you couldn't still enjoy beans. I LOVE refried beans! I make home made ones all the time, throw em in the blender and fry em up in a bit of butter and sprinkle em with cheese! Yum!
You might want to go to the book store sometime and check out some of the low-carb and paleo type cookbooks. Even searching online is great, lots of great alternatives to using flour. Such as arrowroot powder or almond flour etc. You can make breads and all types of things that would ask for flour, yet without the nasty effects of high-glycemic carbs.
