Talking Looking For GREEN Foods

We're having a Food Day for St. Patty's Day in March, and are trying to do all green foods. I'm trying to come up with something OP or mostly OP to bring. Anything in a crockpot or that can sit out all day would be good. So far, only thing OP I can think of is Stuffed Green Pepper Soup and I'm stuck.

Any ideas?

You could do Italian style collard greens.
The longer greens sit the better they taste (in my opinion)
I made them for the family last night (mostly) following a recipe off of grouprecipes.com

Broccoli- when cooked just so, has a beautiful vibrant color.
I love it with lemon and garlic.

Creamed spinach soup (use LC cheese for the "cream"), artichoke with spinach dip (with LC cheese) and there's a recipe on lazy cabbage rolls in a crockpot.

amandie, have you made a spinach and artichoke dip using LC cheese? any recipes? we're having a party this weekend and i've been craving S&A dip...this would be much more figure friendly.

Zeffryn- Yea, I made this recipe once and it was very good with homemade pita chips. The only thing I did different was use a little less green onions and fresh spinach. Hope you like it as much as I did!

Broccoli salad cut into very small pieces, along with green pepper, onions. Top lightly with some balsamic vinegar dressing. Along the side of the dish to give color arrange some grape tomatoes.

Another great dish is baby arugula with the above dressing, made into a bird next shape and filled with orzo pasta, sundried tomatoes, and feta. If you are concerned about the feta it does not require much. The taste is fabulous and it looks fantastic.

Any green lettuce salad would work. Dress it up with some other veggies, green onion, cherry or grape tomatoes, peppers. Sit in another bowl of ice, cold water, or a couple of the freezer packs, and it will stay fresh. A hint of olive oil, lemon juice or lime juice and some balsamic vinegar and you're good to go.
