Default Thumbs Up For Hungry Girl This Time

I have tried a few Hungry Girl Recipes that I really did not enjoy, smelly rubber noodles and onions coated in tree bark, but I decided to give it another shot and try her "Yum Yum Brownies." Now, I had read reviews that said they were MUCH better served cold, but I didn't believe them.....I mean, what is better than a hot brownie? So, I ate it right out of the oven, and while it was fine, it tasted very much like pumpkin and the texture was not at all like brownie. So, I put them in the fridge and had one with breakfast this morning, and WOW it was good! Much more fudgy, though still muffin-like, but the pumpkin was not at all detectable. Thumbs up for Hungry Girl Brownies at about 180 calories for large sized, satisfying muffin.

Preheat oven to 400, grease or line 12 muffin cups, mix one box of Devil's food cake mix with one 15 oz can of pure pumpkin, bake for 20 minutes, and most importantly REFRIGERATE!

I'm going to have to try that. I actually love pumpkin with chocolate, so even the pumpkin taste sounds good to me

I used to make these a lot...they are sooooo good! They are much thicker than a cupcake, but I like that because they fill me up more. I've tried it with chocolate cake mix, but it gets way too moist and it seems to work best with devil's food mix...not sure why.

I've seen her recipes with pumpkin but have been hesitant to try them because the calories are more than I want in a dessert. But I have been very curious about these and may give them a try since brownies are by far my fave dessert. Maybe make my portions a bit smaller so they work for me.

I've been wanting to get a mini-muffin/cupcake tin - that size might be really nice for a chocolatey snack or small dessert.

Three minis are equal to one regular sized. The texture is a mix of a brownie and a cupcake, more like a muffin, which is why I ate it for breakfast. Eating a brownie or a cupcake for breakfast would not feel appropriate to me, so I changed the name for myself to Pumpkin Chocolate Muffins, added an orange and some almonds, and felt better about it, mind games ;0)

Nor would it for me if I was trying to eat this as the main portion of breakfast. But I was thinking of it as a dessert / after dinner treat. Then I think one or two minis would be perfect. But I have regular muffin tin so I was just going to make 18 or 20 instead of the 12.
