I do that one a lot for potlucks since it is a crowd pleaser and kid friendly.

Sometimes I put extra green onion, or artichoke hearts.

Or I blender the dressing ingredients so it is fast.

I have one that I came up with a few years ago, and every time we have a potlock or family get-together I am told I have to bring it. It is really tasty and full of veggies.

Finki's Pasta Salad

1# Garden Rotini Pasta(or tri-color)
1# Polish Sausage or Pepperoni, cut into rounds and then fourths(optional if all you want is a pasta and veggies)
12oz. Jar of Marinated Artichoke Hearts, drained and chopped
3oz. Green Olives, sliced
3oz. Black Olives, sliced
5 Mozzarella string cheese sticks, cut into rounds with kitchen shears.
1/2 Red Onion, diced
1 carton Grape Tomatoes
2c. Broccoli Florets
2c. Cauliflower Florets
1 bottle of your favorite Italian Style Salad Dressing

Cook pasta as directed. Mean while cut all veggies into a large serving bowl. Add cheese, olives, tomatoes and drained and cooled pasta. Pour prepared dressing over all and toss well to coat. This makes a really nice sized salad and is better if allowed to cool and merry the flavors for several hours before serving.

I wish I had a pretty pic to go with it, because it really does make a pretty and colorful salad.
