Talking Mini Mexican MeatLoaves OLE!

Preheat Oven to 350
grease/spray/cupcake tin a muffin pan (then spray the tins)

20 oz pkg of lean ground turkey
1 package Casa Fiesta Chili seasoning (no sugar or MSG!)
1/2 cup Old fashioned oats
Dried minced onion to taste
1/4 cup parmesan cheese
14 oz can FF RF Beans
1/2 cup shredded Mexican cheese (I used Full fat b/c that's what I had feel free to substitute)
1 egg

Pour chili mix (or the assorted chili seasonings you enjoy) into chopper with oatmeal, dried minced onion and parm cheese
Grind that sucker up!
Whip an egg (I did mine in the kitchenaid) then beat 1/2 the can of FF RF Beans into the egg.
Add the Turkey Mix till Incorporated then add the spice mix
Spoon into cupcake tins
At this point I popped them in the oven for 25 ish minutes and then "frosted" them with the remaining FF beans and the shredded cheese and let it sit in the oven while it cooled down

Next time I'll frost with the beans before putting in the oven, Also I want to try adding some finely chopped up mushrooms.

I forgot the egg when I did my first calculation
but it ends up being 146 calories per Mini loaf

I used the Mild chili but they have hot
and SPicy FF rf beans would be Awesome!
If you use cupcake tins use the foil ones!
