light coconut milk

  • Cottage - the chicken curry was delicious.

    DH put in a can of light coconut milk. I checked the allowed food on Phase 1 and 2 and don't see it.

    Would that count as a dairy?

  • I did a Google search and it looks like Coconut Milk is a fat. It's high in fat (as well as saturated), carbs, calories and sugars.

    I'm glad you enjoyed the curry, sophie! I hope you didn't have too many dishes to wash. My DH manages to dirty every dish in the kitchen when he cooks.
