Cottage - the chicken curry was delicious.

DH put in a can of light coconut milk. I checked the allowed food on Phase 1 and 2 and don't see it.

Would that count as a dairy?

I did a Google search and it looks like Coconut Milk is a fat. It's high in fat (as well as saturated), carbs, calories and sugars.

The light coconut milk is fine to use, just remember to use no more than the recommended amount, which is 1/3 cup. I've used it as an ingredient in several approved SBD recipes.

I'm glad you enjoyed the curry, sophie! I hope you didn't have too many dishes to wash. My DH manages to dirty every dish in the kitchen when he cooks. ;)
