nancy - since you're such a baker, here's one of my favorites - biscotti! made with either splenda or splenda blend. the only warning i have is to pick a recipe that doesn't have butter in it [my preference]. i have one written down somewhere, and will look for it, but in general, it's about 2 eggs per cup of flour, quite a bit of baking powder, the equivalent of about 1/2 cup of sugar, and then the 'flavorings.'
i experimented with stuffed shrooms last night [shopright had GORGEOUS ones yesterday!!!]
chopped up the stems, sauteed them with a little bit of onion, then dumped on some creamed spinach and cooked it down until it was nice and thick. and then, after it cooled for a bit, added some grated swiss. yummy!!!!!!
