Easter plans

  • what will ya'll do or bring to the Easter get togethers that you will be having with your families? i plan on bringing my devil () eggs so that i know i will have something there i can have. what about main dishes? love to know what you ladies are doing.

    I am just excited about being able to have pureed foods then! We have it at our house and everyone is trying to lose weight for an upcoming wedding, so I am sure that the whole thing will be scaled down this year.
  • I try to cook the main meat. It will probably be an untraditional turkey this year. I also usually cook at least one side that I know I can eat. And then I try to get someone to bring a green salad or veggie tray. Our family has scaled down on the number of dishes over the years. Now if I can just convince my mother that we don't need dessert. Sigh.

  • I have the gang coming over... ham, taters, stuffed shrooms... haven't even thought about dessert I'll make a big ol green salad and hopefully fill up on that first.

  • SF candy!!!!
    I decided that at our annual family Easter egg hunt that I would give everyone the option of SF candy. Holey Moley!!! That stuff has 8 grams of sugar plus all the sugar alcohol and carbs. Believe me when I tell you, I couldn't give my family that much sugar alcohol and live to tell about it. Right on the package it says that this is not a low calorie product. DUH!!!

    Maybe I can make some tofu truffles dipped in carob!! OOOOH! YUCK! Just kidding. Um wonder if there is such a thing!?! LOL!!

    My family usually kills the fatted calf and hog too. No scaling back for my MO family! So, I guess what ever I bring will be something I know I can eat.

    Seriously, I haven't tried SF candy and don't think I will even have it in the house. Pooting and vomiting just doesn't seem like good Easter cheer!!!!

    I made a splenda apple pie for my family this week and tasted about 1/4 c. of the filling and it was good and juicy. I loved the dough of the splenda sugar cookies. The GKs loved them, but said the chocolate chips cookies didn't have much taste. Their favorite so far are the Chocolate Chocolate Chip Splenda cookies. They sample what I make for my DH lunch bucket. He's been taking whole-grain high protein bread sandwiches, splenda cookies and homemade yogurt with Bare-naked Granola and fruit. He hasn't complain and told me that he is....well, very regular!!! LOL!!
  • nancy - since you're such a baker, here's one of my favorites - biscotti! made with either splenda or splenda blend. the only warning i have is to pick a recipe that doesn't have butter in it [my preference]. i have one written down somewhere, and will look for it, but in general, it's about 2 eggs per cup of flour, quite a bit of baking powder, the equivalent of about 1/2 cup of sugar, and then the 'flavorings.'

    i experimented with stuffed shrooms last night [shopright had GORGEOUS ones yesterday!!!]

    chopped up the stems, sauteed them with a little bit of onion, then dumped on some creamed spinach and cooked it down until it was nice and thick. and then, after it cooled for a bit, added some grated swiss. yummy!!!!!!
  • Biscotti..UMUMUMUM!
    The mushrooms sound so good. I love Mushroom burgers with marinara and moz. Biscotti recipe would be nice. I made a "Heavenly Cheesecake" with splenda today for our St. Patty's Day party. I made some little single servings in cupcake papers. The wee ones and I had them with fresh fruit. It is much better than the splenda Key Lime Cheesecake. I didn't have any sour cream and used some of my homemade yogart in it. Tomorrow I'm going to make the Swiss and Bacon Bites from "the world according to Eggface's" blog.

    I tried to use my WLS card for a child's meal today and got turned down. So I'm toting home leftovers. The brats!!
