Default Tofu Noodles

I tried a new food yesterday call Tofu Shirataki. They are spaghetti shaped noodles made with filtered water, tofu, yam flour, and calcium hydroxide.

4 oz is 20 cal; .05 fat; sodium 15 mg; carbs 3g; fiber 2; and protein 1. I used them in my beef stir fry and they have the same consistency as spaghetti, didn't break apart, and like all tofu, well to me anyway, took on the taste of what I cooked it with. They are recommended by Hungry-girl.com and my DH loved them. I would buy them again. They went down easy and stayed down. They can be found in the refrigerated section.

OT: I hit 228.5 last Monday. I can't believe I'm in the 220s. This morning I'm 226.5. 20 more pounds and I will weigh less than my DH for the first time since 1972!!!! I remember when we were in the military and I would run out of clean undies and he had tons of khaki boxer short and I would wear those until we got paid until we could do laundry. I don't think I'm that desperate anymore, but I am eyeing his sweats! LOL!!!!

Nancy - I'm so jealous! I've been looking for those noodles everywhere, but they are not to be found her in Va. Glad to hear you enjoyed them (lots of 3FC'ers highly recommend them).

Sounds like you are making great progress... keep up the outstanding work!

walking2lose: I found them at our little podunk Meijers Dept Store. I couldn't believe they even carried anything like that. I don't know if you have a Meijers in Va. Knowing how this area is about any specialty foods, I'll probably never see them again. I think I did see them at a Walmart once, but really didn't pay them any mind at the time. If I remember right they were around $4.00 a bag.

Asian markets carry the Shirataki noodles as does Trader Joe's if you have one near you. They can also be bought online from miraclenoodles.com. They come in different shapes. Most people seem to prefer the thinner spaghetti type ones to the thicker fettuccine types.

I found them at whole foods for 2.99 I wish I found them at TJ's not in any of my local groceries but they are at the Giant by my Mom in PA!!
Nan you can make a nice spag and meat sauce with it too!!

I have asked at my TJs repeatedly. They don't carry them, but I have suggested they start. I'm hesitant to order online because I know I will pay through the nose for shipping. I'm still looking though... maybe an Asian market is where I should look next.

Your doing so good nancy. I remember when we started our surgery about the same time. Im gonna try the noodles if i can find them in this part of the country. Right now im not getting out at all.. its 30 below!! and miserable weather and im getting cabin fever.
Welll group, Im at a long plateau and cant get the scale to budge. doing the water and protein shakes but know i need to exercise more. I lost a lot of muscle when i lost the first weight due to medical reasons...The fibro and RA acts up in this cold weather so i try to at least walk the house. Heck the dog wont even go outside.
My doctor says i need to eat more carbs ... hmm i dont like that idea cause i can gain just looking at them. I was wandering what some are eating for a bread substitute. Breads were my downfall and im afraid to start and they are high in carb but id sure like to find something legal .. is there a recipe for a low carb, low fat, low flour, low AIR !!!!!!!!! bread out there!!

I'm always glad to hear from you! Hope your daughter is doing well. I'm going to Florida tomorrow because my uncle was killed in a freak accident. And I hate the cold weather more than anything. I swear that I'm not coming back! I don't know how you stand the 30 belows. I have to kick my danged little yorkie out the door when it gets down in the 20s, so 30 below is definitely out for him. I didn't have any summer clothes to wear and was trying to figure out what to do about them. At one time my SIL gave me a bag of clothes to go through someone had brought into the church and I could wear all of the pants, but didn't take any of the capris and the rest was donated to Goodwill. I called her yesterday and lo and behold they hadn't taken any of the stuff to Goodwill yet and they were sitting in the corner of her office. So I got four pair of capris now and with the lighter Spring clothes that I'd been saving for Spring that I can actually wear now, I think I'm pretty much set. I sure didn't want to spend any money on summer things right now. I do alter clothes, but it is a stretch when they are two sizes too big, and I know I won't be able to wear these capris for summer.

About the wl stall. I seem to go through them much more now, the longest one was about three week. I mainly think it is because I don't eat enough and my body is also trying to adjust to so many changes.

I finally got to eat 1/2 c. of Mac and Cheese last night. It is an Ellie Krieger recipe and has butternut squash in it. It is higher carbs than I like, but I used the Barilla Plus. My DH wanted to know what kind of Mac and Cheese it was and I told him healthy. Which translates to him: Don't ask, just eat it because it probably has something weird in it. He did like it and took it for his lunch today. That is how I got him to eat beef tongue!

Bread!!!! I'm on a quest to make the healthiest, highest fiber, best tasting bread ever. I've enlisted the help of Mary, my Amish friend and we have come up with some pretty weird textured stuff. I want it holey and airy and it has to be coarse because I can't do fine bread. So if anyone has a recipe or knows of a good healthy bread cookbook let me know. I don't really miss it, but a good ff balonga sandwich with a big fat homegrown tomato and lite mayo would kind of taste good come to think about it. I do occasionally eat a Ballpark White Smoked Turkey Frank bunless. Besides bacon that is about all the processed meat that I eat. To do the low carb tortilla for bread and pita chips.

Oh gosh, I'm rambling again. Listen Carvin, I think about you a lot. I'm sorry things have been so hard for you, but Spring is right around the corner and we'll be able to sit out on the back step, with a cup of chai tea and soak up the sun. I'm so looking forward to that!!!!

oh - a good bread cookbook - i splurged last year on this, and haven't done anything other than look at the pictures!!!

King Arthur Flour has published a HUGE, gorgeous book on cooking with whole grains.

Default Oh JIffy!

I saw the King Arthur cookbook, probably an older addition, at the 1/2 Price Bookstore and I passed it up. I didn't think there would be a need in my life for bread. Well, there is!! I have a little bread machine that bakes a 3/4 loaf in 45 minutes and it does really well for just two people, but it doesn't have a great ability to do whole grains, rolls, pizza dough, jams or cakes. I've been experimenting by mixing and kneading it first and then throwing it in the bread machine. It was seven-grain flour and it was a little heavier than usual. But the darn stuff was barely brown after it was cooked. I read somewhere that I probably need to add a little more fat to the recipe. Let me know if you find any really good coarse rustic bread recipes. I have requested a Zojirushi Mini Home Bakery, but it is costly and I'll probably get it when pigs fly! Maybe I should cut back on my food buying addiction and save for the bread machine!!!

OH P.S: We are Cleveland fans and we just hate the Bengals and the Giants! SORRY!!
