  • Mexican Lasagna

    Ingredients:

    * 4 ( 6 inch) tortillas
    * 1 (15 oz.) can black beans, drained and rinsed
    * 1 (141/2 oz.) can no added salt stewed tomatoes
    * 1 1/4 lbs. ground skinless turkey breast
    * 1/2 cup chopped onion
    * 1 cup frozen corn

    * 1 cup salsa
    * 6 oz. reduced fat cheese
    * 1 Tbsp. cumin
    * 2 Tbsp. chili powder
    * Morton Lite Salt(r)
    * pepper to taste


    Preparation:

    * Coat a skillet with cooking spray and brown the turkey.
    * Add the onions and seasoning. When onions are tender add the
    tomatoes, beans, corn, and salsa until warmed through.
    * Coat the bottom of a casserole dish and layer as follows: meat
    mixture, cheese, tortillas. Top with remaining cheese.
    * Bake in preheated oven at 425F until cheese is melted.

    Makes: 6 servings
