Today,
I went to my local korean market and picked up some tahini (they have everything). I put my garbanzo beans in the food processor, some tahini, lots of garlic, a little lemon juice, a dash of salt and off it went! Oh and I added a little water because it was fairly thick. It is awesome and tomorrow I'm betting it will taste even better.
Anyone else have good hummus/hummus like recipes? I'm thinking of trying a different type of white bean next time.
2 cups cooked (skins removed) garbanzo beans
1/4 cup tahini
1 lemon, juiced
2-4 cloves of garlic (depending on my mood)
Cayenne pepper to taste
Salt to taste
I process this in my food processor and then add cooking water from the beans until it is the thickness I want.
Oh, and it is always better the next day! I like to sprinkle smoked paprika on it when I'm serving it to company. Mmmm...
My basic formula is pretty much the same as Zenor - but I vary the flavourings. Roasted garlic is great, as is extra lemon with dill. I've also added roasted chiles - that was good
I've read interesting things about fava beans but have no recipe for them...
I am however a hummus addict. I generally use 2 cans of garbanzo's - 4 cloves of garlic, salt and 1/4 cup of lemon juice.
Also...for more flavor, I leave out the tahini. It's not really hummus I suppose but it tastes better to me and cuts some calories. You could sprinkle toasted sesame seeds over it though. Yum.
Oh, I just remembered something. I made edamame hummus one time and it was good. It's the same as regular hummus but made with cooked edamame instead of garbanzos.
I've also seen recipes that call for you to split a recipe for hummus in thirds. One third you leave plain, another third you blend a big bunch of cilantro in it, and the 3rd third you blend half a jar of roasted red pepper in it. So you have a trio of hummus (is there a plural form???) I think the recipe was meant for a party, but they sound like good ideas.
My hummus recipe is pretty simple. I used to use olive oil and tahini, but realized I could cut down a lot on calories by giving them up while still getting a great taste. I basically take a can of garbanzo beans, drain and reserve the liquid, then add the juice of one lemon, tons of garlic (til it tastes right, I don't usually measure or count), blend and keep adding the reserved bean juice until I get the right consistency. I don't add salt to mine because I'm trying to watch it, but found that the salt already in the canned beans was plenty when I made some a couple of days ago.
I didn't add olive oil in mine and I forgot that it is a common hummus ingredient. Also, I had rinsed my beans before putting them in the food processor so the salt was pretty minimal. I actually just added a dash more for DH than me. I don't normally add salt to any of my food.
Carrot sticks and hummus is on the menu for today! As well as my hummus/avocado/cucumber lettuce wrap.
I love making my own hummus. I would say hummus accounts for about 75% of my food processor use. I love roasted red pepper (just roast in the oven, remove skins and seeds). Sometimes I’ll roast a small eggplant and scoop out the insides and throw that in. Kind of like a hummus / baba ganoush (sp?) hybrid. If I’m serving company I like to sprinkle some toasted pine nuts and paprika on top. Homemade whole wheat pita chips are my favorite dippers, yum!

in addition to tahini, chick peas, salt, water, lemon juice , sprinkle some chopped parsley on top and add some olive oil with some paprika. The parsley adds a nice taste to it. (that's at least how we do it in Lebanon )
Oh and another famous entree dish is almost the same idea instead of chick peas, we used cooked eggplants, this is my favorite, i'll try to ask my mom about the recipe if someone is interested since she's the one who used to cook for me (i'm a terrible cook)

I'm printing these out. DH loves hummus and is always looking for lunch ideas. He's retired so gets his own lunch at home. He gets tired of sandwiches, but doesn't always want - or have available - leftovers. He'd happily eat hummus with carrot sticks or pita chips.
yep baba ghannouj, that's the one i'm talking about... oh by the way try dipping peeled radish in hummus, this is the only way i eat radish. it tastes very good in my opinion and of course pita bread
