Default Back to the weekly prep thread - question about sweet potatoes

OK< so if you cook them up on Sunday, and store them in the fridge, what do you do when you are ready to eat them. I hate to be so basic, but since I already ruined 2 by cooking them wrong I don't want to mess up the reheat piece. Do you just microwave them, and for how long? How long do they store in the fridge (assuming foil?) without drying out?

I had a cooked one in my fridge for about a week (just sitting there--no wrapping except its own skin), and used it yesterday. I removed the skin, sliced it up, and put it in a microwave container with a top, and nuked it for a couple of minutes. Turned out just fine.

I bake mine in their skins in the oven, then keep them in a gladware container in the fridge. Just lop of a piece when I want some. I usually eat it cubed (cold) in salads since that's the way I eat about 75% of my meals.

I always have leftovers. Usually I peel and mash them (no additions) and then either nuke them or stick them in the oven (if I'm baking something), and them come out fine. I do this will winter squash as well. If they seem really dry, you could add a little water so they steam. One nice thing to do if you're going to bake them is mix in a little water, mash them and then spread the mixture in a pie plate and bake. The top gets crusty and good!

Thanks everyone. I cooked them up today, rolled them in towels in between my hands when they were done to soften them, and then will fridge them til tomorrow and try to microwave them just to heat them up - about 1 min. I'll let you know how it turns out!

UPDATE: It worked - they came out great!!
