I
always have leftovers. Usually I peel and mash them (no additions) and then either nuke them or stick them in the oven (if I'm baking something), and them come out fine. I do this will winter squash as well. If they seem really dry, you could add a little water so they steam. One nice thing to do if you're going to bake them is mix in a little water, mash them and then spread the mixture in a pie plate and bake. The top gets crusty and good!
