Default Scumptious Saturday Menu, August 13, 2005

Rita, I'm not as clever as you are!

Breakfast: Shredded wheat and bran with skim, splenda and fresh blueberries

Lunch: Eggbeater omelet with FF feta cheese

Snack: Cherry Garcia Smoothie (new recipe)

Dinner: Not sure but it will be Core

Snack: Popcorn (unless we have corn with dinner)

Lunch: none, wasn't hungry

Dinner: maybe salad

At least if I can't eat, I can still drink water. I've had about 6 bottles today.

b: strawberries, banana, yogurt & grape nuts (I really need to come up with a short name for this concoction!), milk
l: salad & turkey breast, 1 pt for dressing, last of the watermelon, milk
s: apple, graham cracker (1 pt)
d: hamburgers (no bun), oven fries, corn, milk

s: hopefully none. If I'm hungry, sf ff french vanilla cocoa

Angela, how do you make your oven fries? I'm going to check our board to see if there is a recipe. The one I have doesn't look great.

This is the recipe I've been using. I cut the fries thin like McDonald's, and they turn out yummy. Even my picky dh likes them.

Oven Fries
1 ¼ lbs (about 2 large) baking potatoes, peeled and cut into ½” strips
¾ tsp salt
½ tsp Splenda
4 tsp oil
1 tsp paprika

Preheat the oven to 450. Spray a nonstick baking sheet with nonstick cooking spray.

In a large bowl, combine the potatoes, ¼ tsp of the salt and the Splenda with cold water to cover. Soak 15 minutes, drain and blot dry.
In another large bowl, toss the potatoes with the oil and paprika. Place in a single layer on the baking sheet. Bake, turning the potatoes over as they brown, until cooked through and crisp, about 45 minutes. Sprinkle with the remaining salt. (I sprinkled mine with garlic salt instead of regular.)
Serves 4. 159 cal, 28 g carb, 5 g fat, 3 g fiber

Thanks, Angela! This is EXACTLY the recipe that I pulled out to try. I had seen some with egg whites and wasn't sure this recipe would get crispy or brown enough. I'll be trying it next week.

Question weird eating day???

Breakfast/lunch - did not eat as I was on the computer...but was then starving by mid-afternoon

1 large bowl raisin bran w/lf milk
3 sliced fresh peaches

dinner: rotisserie chicken, corn on the cob, 2 pierogies w/lf sour cream and onions
lf mini waist watchers cherry cheesecake
diet coke

Of course very slow on the water which is not good.

Now I am having weird gas pains/gurgles in my stomach - no idea what this is from but it is most annoying!

Vickie, Scrumptious is such a pleasant word. And you are certainly Clever!

Breakfast - scrambled eggs & LO steak sauteed with onions
Lunch - Salad w/1000 island on the side (2 pts) Also, 1/4 cup of pasta salad (???pts)
Supper - Canadian Bacon & cheddar cheese omelet w/grits
Dessert - banana pudding
