melissa, i may be wrong but i'm thinking you can grill the chicken in your skillet. just spray with pam and cook thoroughly on both sides. isn't this the same as a gfg except you have to turn the chicken to get it to cook on both sides.

also, i have a recipe for southern-style oven fried chicken. you bake it @ 375* in a sprayed baking dish for 20 minutes. you might try that.

Sandra, thanks for the tip. But I actually decided to make a refried bean casserole tonight instead. DH and I are both starving and it was faster. Its a recipe that I got off of another website. The directions are kind of sketchy, but hopefully I can fill in the gaps. If its good I'll post it here. But I think your ideas for the cornmeal chicken would work. I will make it sometime this week, maybe tomorrow.
And Sandra, you deserve a bravo! You are inspiring me to press on!

Hi everyone ! Busy weekend here. :dizzy: Trying to catch up on everyone's posts. Am doing the Wendie plan this week; WI on Wednesday so depending on the outcome I may join your CORE challenge if you do it again next week.

Frouf - sounds like you have a busy next couple of weeks. Been there and done that. Still need to plan my Disney vacation. Have everything planned, just need to sit down and book the airfare and hotels etc. :o

Kathy - Can DD take your car to the coast and you can use hers? Didn't know if that would be a better deal? A friend of mine's husband woke her up one night and said, "do you see it?", she says, "see what?", He says, "on the ceiling", She's half hiding under the covers and says "what's on the ceiling?", he says, "don't you see it?", she says, "no, what is it?", He says, "a huge spider"...............nothing there, he did not even remember the next day. :s: Dr. says, it's called "night terrors"., I don't know if he still has them or not., but scary for her.

Angels - I agree. The quick oats I think taste better. ;) I would bag them up and take them along.

Linda - here's a soup recipe:

Here's a good one: Broccoli / Cauliflower cheese soup 1 cup = 1 pt.

20 oz. frozen broccoli florets
10 oz. frozen cauliflower florets
10 oz. frozen carots
6 tsp. chicken granules
1 tsp. dehydrated onion
12 oz. velveeta light cheese (comes in box of 16 oz., will have to cut off 4 oz.)

Boil all ingredients (except cheese) in 5 cups of water with chicken granules for 20 minutes. DO NOT DRAIN Mash veges, add cheese, stir until mixed. ENJOY.

Posted this in the CORE recipe thread for soups., too.

I usually don't look at those, but when Melissa mentioned it, I looked :D

When Vickie gets back I am sure we'll hear from her. So that may be tomorrow nights dinner.
I might just do something easy... either grill like grill them on top the stove, or ....I don't know. I am not ALL that hungry believe it or not, but I have to eat. It keeps our metabolism in check!!
Well I am going to get some food.....see you all back here tomorrow....

Hey, hey guys!!

First, Lisa ... she's not on my insurance. I mean she's on my policy, but not to drive MY car. I think I'll tell her to take it somewhere for a tune-up and I'll pay for it. I can't imagine it being more than $100 or so ... and I'll feel much better if it's been thoroughly checked out. I'd pay that for the peace of mind.

Their dad is a real twit though. He "invites" them to go on vacation with him and his new wife and baby, but doesn't have room for them. My older DD has a really great car (new Eclipse) and it's under warranty. I would much rather she drive her car and little DD go with dad but little DD is stubborn and wants to drive. Hopefully he'll help her out with the cost of gas. They're only going for 4 days. Also, little DD doesn't have medical insurance coverage because she's not in school and is over 19. She'd better be careful and not get a bad sunburn, jellyfish sting, etc. One more thing for me to worry about, huh?

I'm using points. Yes, POINTS! I'm having the rest of the beer in the fridge, but in addition to my APs, I'll be fine. Once it's gone, I'll not have such a problem for the rest of the week. I'll be at work all day and DH has already said we are going to the gym after work. He goes to a different one, but still we're going. Dinners, starting tomorrow, will be grilled meat and either salad or steamed vegetables. He is determined to "reboot" his life (his words to me this morning) and is asking what he can do to make my life better. Well ... hmmmmm ... could you stop snoring? :lol: Okay, just kidding.

Well I had a nice day today being able to be 'here' more often. It's kind of nice to be able to do that. I felt in touch and in the loop. I am glad everyone is happy with our 'challenge' This will keep us motivated. Funny how I seem to relate more to those of you here from all parts of the Country ( and Canada) then in our meeting rooms with people sitting right there. I feel good about what we are all looking to achieve this week, even if it's getting your water in. For those who just can't sometimes that is a challenge. For me, as you know it's the fruit. I will pack a 1/2 an apple tomorrow and a banana for my work day.
I am so full right now and it's 8PM that I will forego 'snack' I am finishing up the last of my water.
I will 'see' you all back here tomorrow. Tomorrow at work should be a very stressful. The mail which is mostly mine will consist of Saturdays, Monday and Tuesday delievery :yikes: I have my work cut out for me tomorrow. I-yia -yia!!
I will plan my day (program wise) to make sure I stay focused and satisfied through out my day. I have planned already what I will have for breakfast and lunch..may do the Crispy Chicken thingy if we hear from Vickie on whether or not this can be done in the stove. No pressure Vickie :lol: :lol:
Kathy that's what points are for....so use them if need be. But NO JellyBeans :rollpin:
Lisa found the post and read it...very interesting. Sooooo glad there is a good reason for why we do that. I know eating also rev's up the ole metabolism too!!

WHY OH WHY???

I went into the pantry to get a box of pudding, was making some of the cheesecake pudding because I just cut up a container of strawberries. Anyway, I saw a bag of marshmallows that DD brought home from her camping trip. Now I don't reallly even like marshmallows but for some stupid reason I brought the bag back to the computer and started eating them! Do I think I'm trying to GAIN???

So no dinner for me! I think between the last of the beer, the marshmallows, the bagel chips I had while stirring the pudding ... I'm good to go. Poor DH will either go to bed hungry or maybe I can make him a Lean Cuisine after while. Either way, there's nothing gonna get cooked here tonight!

I've just taken 3 Tylenol PM tablets and am waiting for them to kick in. Hopefully it's soon. Meanwhile, I'll go make another potholder. :D

Hey ladies! Had a pretty good day today not working. :lol: That's always nice. Tried a new recipe tonight for dinner that I got from another website (can't remember where). It was titled Refried Bean Casserole but I think its really more like Mexican Goulash. The directions were very sketchy, I kind of had to guess through the instructions. I will post it tonight or tomorrow, it was really good. Although I must admit that I used half "real" cheese along with the ff. Made it really really good. :D
Linda, I'll miss being online for lots of support tomorrow too. And I moved the cornmeal crispy chicken to tomorrow too. hehe, we're lost without Vickie. :lol:
Does anyone know if turkey bacon is core? Seems like I couldn't find it in the CFC, and I really like it. I have a really hard time finding breakfast foods that I like. I used to love to eat red. fat cheez-its and a diet coke for breakfast, things like that. :o

OMG you guys, I am SO sorry! I just got home and saw that you needed me for your cornmeal chicken recipes. I've only made it on the George Foreman grill but I think baking it would definitely work. I'll go look at the recipe now to see if it has any other instructions. I left the house at 11:15 this morning and just got home. I had a great time. I ate all Core food but alot of it. I also had 80 ounces of water, 16 ounces of decaf coffee and 24 ounces of caffeine free Diet Pepsi. I'm floating! I'll be back after I check the recipe.

Well, the recipe wasn't any help. The George Foreman gets very hot so I'm guessing the oven would need to be very hot too. I think someone suggested 375 degrees which sounds about right to me. I'd spray the bottom of the pan with Pam spray and keep an eye on them. They get pretty brown on the GF but I'm not sure how dark they'll get in the oven. I'm sorry that I'm not very good at making these kind of conversions. That's why I'm always looking for recipes because someone else has already taken the guesswork out!

Well, I am VERY tired. I see that I missed alot of activity today but my poor eyes are crossing. Those Great Nieces and Nephew can tire out an Auntie! I'll be back in the morning to respond to everyone's posts. I hope you enjoy the rest of your evenings!
