  • Hi Everyone! Hope we all kick butt this week!
  • Hi everyone and Happy Monday. Its about 1200 degrees here today! OK, not that high, but in the mid 90s and HUMID. Right now I'd rather have it be 0 and snowing! Can you tell I hate the humidity? How do you all live in the south???

    I posed the buffalo chicken burger recipe this morning. If you like buffalo chicken, try these. I'm surprised at how good they are. Not much else going on.

    How about a weekly challenge? Any thoughts?
  • Paula-I know what you mean about the humidity. It is bazillion degrees here too, with "air you can wear". I'm up for a challenge. Since I'm new, I'm not sure what would be appropriate for the group.
    I'm trying a new recipe today. It's the one that Sandra posted, Core'n Bread. It has burger, corn, and salsa in it. I'm going to serve it with ff sour cream and extra salsa. Can't wait to taste it!
    BBL I'll let you know how the new recipe tasted.

  • Wow, that's like over 120 degree!!! I think Noussa has us all beat.

    I am going to have to try the buffalo chicken burger. I will get the recipe later, before I go to the store. I know I don't have blue cheese.

    What kind of challenge to you want to try? I'd probably be up for it, as long as it doesn't have anything to do with walking. My knee has just been killing me these last couple of days, and I'm thinking it's got something to do with all these storms we have been having. Not sure if that would do it but I do have arthritus in my knee, along with no cartlidge.

  • Wow! I just took the Mexican Core'n Bread out of the oven and DH is already on his second helping! It is really good and makes a very large amount. Nancy-weren't you the one who said they needed pot luck recipes? This would be a good one. It makes a 13x9 dish that is full to the top. Yum!!

    Sorry we are whining about the heat Noussa. I had forgotten you were in SA and were probably roasting.

    Rhonda-salmon sounds good. How are you preparing it?

    Tracie-sorry to hear about your knee. My DH has had two cartilage stimulating surgeries on his knee, so I understand how you must be feeling.

  • Sloanie, I found the recipe and I will definitely have to try this one. I will have to make it when my dbf won't be here though, I don't think he'll like it. Who knows though. I made a mexican meatloaf, and loved it. So I made it again when he was here and I again loved it, but he didn't care for it.

    What is a cartlidge simulating surgery?? They told me the only thing they can do for me is give me a knee replacement, but I'm too young and they won't do it until I'm at least 50, which is another 3 1/2 years. I don't know if I can live with this pain another 3 1/2 years.
  • Thanks, Rhonda. We've had and still are having some tough weather here on the South side of Chicago. So far, Jim and I are dry and safe with no damage. Nothing more we could ask for.

    I'm primarily Core but not perfect. I've been very, very sick for the last two weeks with the worst head/chest cold that I can ever remember having. I lost my sense of smell completely and most of my sense of taste. I'm just now slowing down with the cough but I still have much head congestion.

    We went out and ran a lot of errands today. It was my first time out of the house for more than a few minutes. I'm exhausted. All of you are doing so well. You should be proud of yourselves. I'll be joining you all soon.
  • Ouch, Vickie! Well, at least you aren't flooded and fending off tornadoes at the same time!

    I poached the salmon. I had one large filet so I cut it in half. I put one cup of white wine in a large skillet, brought it to a simmer and added the pieces of filet. I covered the skillet and let it simmer for 15 minutes. I put the pieces on a plate in a 200 F oven to stay warm. Then, for DH I made a dill creamy sauce by blending a little flour with the wine and butter, salt, pepper and dill. The recipe is on recipezaar.

    For myself I made a salsa of peaches, red pepper and pinapple. DH had some corn and I had salad. Quick, easy and good.

    It's way too hot and humid to turn on the oven for cooking! Tomorrow morning I'm making a crock pot tri-tip roast with tomatoes and Rotel tomatoes. I've got a busy day at work so this will be easy to do and won't require the stove.

    I had all good intentions of exercising tonight but the AC's are not back in the windows and the house is just too hot for it. I could have gone for a walk but didn't feel like swimming

  • Vickie-so sorry to hear about your terrible cold. Hope you feel better soon. Good to hear that you escaped tornado damage.
    Rhonda- your dinner sounds so good!! I don't eat enough fish, so I might try your poaching method.
    Tracie-if you do make the core'n bread, remember it makes a lot. You could cut the recipe in half or just freeze what you don't eat.

  • Vickie! I know exactly what you're going through... you feel like you can't remember the last time you felt "fine" I had a really strong chest cold back in April and I am still coughing and wheezing when I laugh. People think I'm dying each time I hear a joke!
    Sloanie: how's your camp dilemma going?

    Twestra: Have you tried taking Glucosamine and Chondroitin supplaments from the health food shops or GNC? Apparantly they work wonders when taken together.

    Oh...Can you guys please let me know if I missed father's day??? These North American Holidays are often forgotten over here.

  • Noussa, Father's Day is June 15th. You haven't missed it.

    I went to bed early and woke up at 4AM. It's OK because I have some work to do. Also, at this hour the CBC has all kinds of international news that doesn't come on at other times. I'll be very sleepy in the early afternoon though!

    I've been thinking about challenges for the Board. How about something easy (?) to start with. We're all at different levels of different things, but we might start with doing some exercise at least 3 times this week. Each of us would choose her own exercise, but do it 3 times in a week. If you already do that, then you would increase your intensity three times.

    Or, we have to try a three new recipes in a week? If you already do that, then you have to include something you don't normally eat...and is good for you three times in a week.
