Default Wednesday's Menu

YUMMY! Could you post your recipe for the eggplant parmesean? I feel so stupid - - just heard about Volumetrics YESTERDAY!! Am headed to the bookstore sometime today to get the book and start Sounds like an answer to my prayers! I'm a volume eater - don't eat because I'm depressed, or angry, or upset....I eat because it TASTES GOOD!! Someone's post yesterday about the "feeling full" feeling...what's that! LOL!
Hopefully this time I've found something that will WORK!

Breakfast: 4 oz lf peach yogurt, decaf w/cream

Lunch: LO 1/2 bbq steak, roasted potatoes, mixed veggies
1 tangerine

Snack:?? 1 apple

Later: wine and cheese reception (wish me luck!)

Dinner: TBD

Hello
I did it different and real easy this time.
I peeled and sliced 2 eggplants
slivered a whole head of garlic
2 large cans of diced tomatoes
salt and pepper to taste
drizzle of evo ( about 2- 3 tbspns)
I used my crockpot and layered the ingerdients and always add a little sauce at the bottom and top to protect the veggies from drying out or burning . I set it at low and will let it cook for about 6-8 hours . Then as I plate it up I will add ff mozzerella on top and place in broiler for a minute or so to brown.
I think it will be good and man it is smellin good
