Portabella Pizza
We just finished these for lunch, and they were absolutely delicious, so I thought I would share.
2 large portabella mushroom caps (washed)
2 tbsp salsa per cap
toppings of your choice...I used lowfat mozza cheese and pepperoni.
lightly coat caps with a bit of olive oil, salt and pepper each side, and add a shake or 2 of basil or italian seasoning. What ever you fancy.
Broil caps 10 min, underside facing down, flip and broil 5 more min. Take out of oven and top with your toppings, and broil until cheese is a bit brown and bubbly.
Thats it! Nice tastey lunch
