Smoked Salmon Stuffed Mushrooms!
This is my future SIL's own invention.
Dave's Special Stuffed Mushrooms
18 largish mushrooms with stems removed
4 oz. smoked salmon
8 oz. cream cheese
1/4 cup chopped shallots or green onions
juice of a whole lemon
chopped chives or parsley
Combine above 4 ingredients and put in mushroom caps.
Sprinkle tops with shredded (not grated) Parmesan cheese.
Pour garlic butter over the tops to moisten.
Bake at 350 for 15 minutes and then broil until cheese melts and browns.
Yummy!
