    S - Peanut butter muffins (Quest peanut butter flavored protein powder) with 1 c. shredded zucchini, pre-cooked <<< OK, this is the last time I am going to try muffins. I have tried ~ 5 times and every time is just gross - spongy on the inside and rubbery on the outside The one today was like a sweet omelet sponge ... I even reduced the egg white because the last batch came out way too eggy.... I ate it but I'd much rather eat something else. I'm sad that I can't seem to make this work, it is such a nice idea.
