    Eliminating bread can be the most difficult part of starting the South Beach Diet as the convenience of a quick sandwich is hard to beat. The good news is that almost anything you can have as a sandwich also works great as a salad.

    The trick is to keep plenty of salad greens on hand along with your favorite sandwich meats. Tuna salad, egg salad, roast beef, ham and cheese, and smoked turkey all work great diced or cut into strips and tossed with lettuce, tomato, sprouts, or any other vegetable you’d otherwise enjoy between bread. You can even work in your favorite condiments. Stir olive oil flavored with garlic, hot peppers, or herbs with mayonnaise for an instant aioli, or use a fork to whisk together Dijon mustard with balsamic vinegar and oil for creamy vinaigrette.

    Sliced avocado and even chunky peanut butter (thinned with a neutral flavored oil) can find a home on any salad menu.
  • Thanks for this post. I am on day 2 and feeling a little stumped on what to eat. I am so used to using sprouted wheat bread with everything. It is low in carbs (10 g per slice), but I can't have it on Phase I. Great ideas re: the salads.

    For dressing, some of the Neuman's do not contain added sugar (others do, so be careful) (for those of us who can't even spare the 5 minutes to make from scratch).
