You know what? Sometimes life just gets in the way. If you stress about not getting your lunch packed one day out of the countless many that you'll have over your lifetime you won't lose weight as quickly anyway because stress slows down weight loss.
I agree that hard boiled eggs and cut up blocks of cheese are great time savers. I do both of those as well. You can also prep alot of things ahead of time like the chicken someone mentioned.
Early in my plan I eat more fresh veggies because they are more filling. I prepare those ahead of time too. Cutting them how I want and peeling if need be. That way all i have to do is weigh it out.
If you have another day that just doesn't go your way and you find yourself without meal bars (which you can only do twice weekly anyway) learn some good options from local restraunts that you can pick up easily. It might not be the best option, but it's better than nothing. I know that I can always swing by Wendy's and get a plain chicken sandwich, a couple side salads ($1 each) and some apples or oranges, whichever they have. The chicken is probably not exactly the right weight and probably isn't prepared wonderfully, the salad dressing isn't the best either (go easy on it...I like their oriental dressing, but it's WAY off plan...just use a touch of it) and the oranges aren't fresh, they're canned...but it's way way better than another emergency option.
Figure out a couple fall backs. MRC is geared to be specific while we lose, but for me it's also about learning to make better choices. I try not to eat off plan, but if I do it every once in a while and make the best choices I can, I feel good about it.
