Default Making Separate Meals for Dinner

My husband does most of the cooking for our family and I just can't convince him to cook healthy meals. Do you think it's ok to cook separate meals for myself? I was thinking of doing it like meal prep, where I cook one or two meals and then divide into portions to last me the entire week. I don't want to be insulting to him or the rest of the family by eating separately, but my options are to eat a very tiny portion of what he cooks for dinner and then be hungry the rest of the night (and over my carb limit), or have a more reasonable serving of healthy food.

You have every right to look out for your well being.
Make sure your family knows that you are enjoying your meal and you just may influence them to eat healthier.
Talk it over with the hubby so he doesn't take it the wrong way.

It's totally acceptable to make a separate meal for dinner. It's also totally acceptable to take a tiny bit of whatever the family makes so that you don't feel left out, and then fill the rest of your plate up with veggies.

Ubee and Blicca, I took your advice and prepped some of my own meals. Husband is ok with it. Blicca, I will keep your advice in mind for my next family gathering. My mother-in-law always cooks meat and two veg type meals, so I will contribute some salad and other healthy choices.
