Default Tofu?

What do I do with this tofu I have? I didn't think it through when I bought it, I just thought "No carbs and only a dollar? Deal.". ;P I don't want it to go to waste so I've been looking up recipes, but all of them seem to contain carbs. I looked up specific low-carb recipes that include tofu, but found nothing. Perhaps my Googling skills need a little work. Or maybe this tofu is destined to live in my garbage can. Do you guys know of any recipes?

The other day I sauteed tofu chunks with onions, peppers, peas and broccoli, then added one tbsp of low sodium soy sauce and some pineapple salsa. It was awesome!!!

Try going to youtube.com and searching for tofu recipes. you'll find several, with video how-to's. this can be great if you've never cooked with tofu before!

Selca, that sounds good. I feel like all I eat these days are eggs, so that'll be a nice treat.

And ThisYear, my mom and I are definitely going to check Youtube out. I hadn't even thought of going there.

Thanks girls. ^_^

Many years ago, I used to take my mom (who never learned how to drive) grocery shopping with me and the kids every week. Well, one particular time, a package of tofu she'd bought apparently came out of one of the bags and I didn't see it and it was in my trunk for a week. And it was the middle of July.

I began to notice this horrific smell in the car....and went looking for it. I found the tofu, all swollen and gooey, had busted out of the wrapping and had...I don't know...not rotted but fermented. And the stench was horrible. Ever since then I can't even look at tofu, much less eat it.

I ended up having to cut the carpeting out of the trunk and hosing it down in the driveway and using all sorts of cleaning preparations on it....had to leave the trunk open and air it out for weeks....and put loads of room deodorizers in it.

I just use it in stir-fry.

I use kale, butternut squash, mushrooms, green onions, carrots and tofu (either soft or firm), a little oil, cook it all up in a large pan and I add some cumin and curry powder, a little salt, some hoisen sauce (basically whatever sauce I have in my fridge).

It's such a good meal! I count the tofu as my protein.

Wow, choirgirlhotel.....you started at close to the same weight I did...but I'm 2 inches shorter than you are. You must look really great now after losing the 42 lbs., I'll bet. Do you have photos here anywhere? And did you do it using Atkins?

Hey Deena,

I did it with Weight Watchers. No, I don't have any photos on here, maybe after I lose all my weight and get down to my goal!

And look at you - you're 5 lb away from you goal (and mine! ha ha). Congrats!! How did you do it?

Tofu is soybean curd. They make it out of soy milk. It doesn't really have a flavor on its own, so it takes on the flavor of whatever it's cooked with. I'm not a fan, because I'm really weird about textures and it grosses me out. The exception, of course, is tofu pie, which is delicious, but it's not really Atkins-friendly.

I got around to trying it, and it was... not what I had expected. My dog enjoyed it though.

LeslieLou, I find that the texture is weird. It doesn't even seem like food to me. Bleh. And btw, I don't like mushrooms either. ;P

LOL! It kinda reminds of the cartoon Ratatouille (sp?) where the little fat mouse would eat anything and not really know what it was? Thats what I think of Tofu lol

You sound like me. I hate mushrooms too. Tofu is mushy if you don't really dry it out. It can be grilled and taste okay, but it takes some practice to get the texture right.
