Glad you came back today and glad the boss is gone. How long is she out for this time? I bet your hair looks nice, not like alfalfa

My hair looks kinda icky today.. last night I was suppose to wash it, but that idea somehow got forgotten.
My purrfish was ok... nothing terrific though. I dont think I'll make this recipe again. I tend to like my fish crunchy and this wasn't.

and no I don't want to burn it to a crisp to make it crunchy... I'll leave the burning of food to Lizzy

Last night, I made the most amazing thing. It is called Mock Mashed Potatoes. I was really unsure of how this would taste, but man was I pleasantly suprised.. WOW. Here is the recipe. I swear this tasted so much like mashed potatoes.. and I really thought it wouldn't. I used fat free sour cream in this dish instead of full fat and Brummel and Brown Spread instead of butter. If it tastes too much like cauliflower for you, add another TB of fat free sour cream.. it really makes a difference.
Ingredients
2 cups cauliflower, finely chopped
1 tablespoon sour cream, or more to taste
1 tablespoon butter
salt and pepper to taste
Directions
1 Steam or microwave cauliflower until very soft. Make sure you drain the cauliflower really really well. I drained mine then placed it on paper towles to soak up more water.
2 Put cauliflower in blender or food processor with butter and sour cream, blend.
3 Add salt and pepper to taste. Serve hot.
Editor's Notes:
Frozen cauliflower works very well.
Grated cheese, minced chives and/or parsley are nice variations to add. Hand mix these in after blending the cauliflower.
I had this, the rest of my sour cream chicken and some grilled squash for dinner.. yumyumyum. Tonight is probably purrfish , mock mashed taters, and grilled zucs.
