I don't know how many books you've read on the subject of low carbing but if any plan tells you not to ingest ANY carbs, then you should avoid that plan. You need carbs in your diet to get energy--without it, your system is thrown completely off and you could end up hospitalized!

There are, however, stricter low carb plans than others--some are Atkins, Carbohydrate Addicts Lifespan Program (CALP for short), the Zone, Protein Power, Sugar Busters and many others. I also suffer PCOS and this is definitely the right way to go to keep the symptoms in check. You also need to exercise regularly and drink a LOT!! of water every day. Without those things, it will be very hard to keep to a program.
As for falling off the wagon, so to speak, we've all done it, once or twice or so many times we can't count anymore. The trick is to wake up each day and keep trying.
