Oddly enough, I had planned on having cucumber for lunch today even before I went to find out what this week's food is, LOL

I really like cucumbers. I eat many of them a week. The low calorie count makes it a real winner.

I make a great salad using chopped cucumbers, chopped onion and chopped tomatoes. I dress it with fresh lemon juice, pepper and a little oregano and salt. That's it. It stays in the fridge nicely for quite a few days.

They're always a mainstay of any salad that I make.

Sometimes when I am feeling a bit munched,I just cut one up and eat it plain.

It's also great dipped in a little hummus.

wow! I have a cucumber all ready to go---before I even knew the food of the week!
I simply chop mine into little wheels and LIGHTLY sprinkle with salt.

I have a cucumber every single day with lunch. I just wash, peel, cut into strips and eat.

I also make a simple cucumber/tomato/red onion salad, dressed with lemon juice, S&P and minced garlic. Sometimes I'll add yellow or orange bell pepper too. Great on it's own, with falafel, or dumped over a heap of greens, yum!

Very similar to mine. I like the idea of adding peppers and garlic. I think I just might try that. No, I'm definitely going to try it. Thanks.

I like to make cucumber sandwiches. I just take some toasted whole wheat bread, slap some ff miracle whip or mustard on it, a slice of cheese, a 1/4 to 1/2 of a cuke and I'm good to go.

I sometimes put cucumber slices into my pita sandwiches and I'll order cucumber on my subs from Subway.

I love, love, LOVE cucumbers any which way... in sandwiches, in salads, alone with onions and some yummy italian dressing, or just plain!

I love cucumbers, too! I especially like the small persian or asian cucumbers and armenian cucumbers.

Recently I've started using the slicer on my cheese grater to slice them in thin strips and put them on sandwiches. My favorite is hummus, cucumber, turkey, avocado, and micro greens on whole wheat!

I also eat 3 oz of cucumber in my dinner salad almost every day.

Somewhere around here I have a recipe for stir-fried scallops and cucumbers that I keep meaning to try. I used to stir fry them with beef that that was great.

My SO absolutely will not eat cucumbers and I just don't understand it. How can you not like cucumbers?

I'm on the fence with cucumbers. They're ok, but I tend only to eat them in greek salad.

I bought some little round white ones at the farmer's market on Sunday and haven't yet figured out what to do with them. They look more like anemic tomatoes than cucumbers! I suppose they'll taste the same. Maybe we'll make a lovely greek salad with the heirloom tomatoes I bought and some fresh feta and kalamatas. Yum!

I love cucumber with yogurt-cilantro dip from Trader Joe's. I cut cucumbers into thin slices and dip them in this low fat dip and eat them at lunch!
